(1) the amount of tea

The amount of tea, according to the tightness of the teapot and tea, the strip shape of tea is looser, the amount of tea is more than that of tea; the amount of tea with solid strips can be less. The benchmark is based on 1/3 of the teapot. The amount of tea is too small, drink tea "as clear as water", quite boring; put too much tea, the expansion of tea after brewing, there is not enough room to stretch, the lid can not be covered, the tea can not release its own characteristics, the tea soup can not be perfectly presented, resulting in waste. Therefore, in general, it is appropriate to control the amount of tea after brewing, accounting for nine points of the teapot.

(2) Water temperature

When making tea, the temperature of boiling water has a decisive influence on the aroma, taste and flavor of tea. Therefore, understanding the temperature is the primary task of making tea. In terms of water temperature, each kind of tea has a suitable brewing temperature, not the higher the temperature, the better. The normal water temperature of brewing tea should be no higher than 90 ℃, and then it should be adjusted according to the tea brewed. If the shape of oolong tea with frozen top is tight, the recommended temperature is 90 ℃; for tea with finer broken or bud tip, the most suitable temperature is between 80 and 90 ℃; as for green tea, the maximum water temperature should not exceed 80 ℃.

The concentration of tea depends on the length of time it takes to make tea. Tea brewing time is too short, tea taste is poor; tea time is too long, tea taste is easy to flow in bitterness. Take frozen top tea as an example, the first brewing time should be controlled at about 50 seconds, and then each brew should be increased by about 15 seconds. as for the number of brewing times per pot of tea, it depends on the quality of tea. Good tea can generally be brewed six or seven times, or even higher. In the oolong tea system, the brewing method of Bai Hao Oolong tea is relatively special. A good tea with a bright brown luster should not be overheated. It is generally started from 60 ℃, three grams of tea is soaked for six minutes, the water temperature of the second is raised to 80 ℃ for seven minutes, and the third is soaked for 80 ℃, but for each minute added, a pot of good tea can be brewed six times.

Cover bowl brewing mode

The cover bowl brewing method uses the cover bowl as the tea set to make tea and drink. The smaller pot brewing method is simple and easy, not only can open the lid of the bowl to watch the tea at any time, but also open the lid to cool down the tea species that are easy to be stuffed, and its tea setting, slag removal and cleaning are also more convenient than the teapot. Of course, you can also use the lid bowl as a teacup and pour the tea into the bowl to treat people to drink.

The cover bowl is usually a "tea bowl", with a "bowl cover" on the top and a "bowl holder" on the bottom, which is called a three-piece cover bowl.

There are two forms of cover bowl brewing:

Make tea and drink: tea is placed in a bowl, washed and soaked to an appropriate concentration, then directly covered with a bowl to drink tea soup.

Use the cover bowl as the teapot: place the tea in the bowl, rinse and soak to the appropriate concentration, pour the tea into the tea, and then pour the tea into a small cup to maintain the uniform concentration.

Whether or not to "warm the bowl" before the tea depends on the temperature of the tea, the water temperature is enough or has been on the high side, do not warm the bowl, the water temperature is a little low, first cover the bowl warm. The amount of tea depends on the size and use of the cover bowl. generally, if the cover bowl capacity is 150 ml, then put about 3 grams of tea, if there are a large number of people to drink, you can increase it appropriately.

The soaking time varies according to the type of tea, if it is bar black tea, the first tea can be produced in 30 seconds, and then the soaking time will be increased in sequence; if it is oolong tea, it is different according to the degree of baking, you can try to find the most suitable method for each kind of tea.

The lid bowl is characterized by the ability to open the lid and smell the fragrance (the aroma of the lid) or to stir the tea with the lid, appreciate the color of the tea, and leave a gap in the lid bowl to pour out the tea.
