If the tea is brewed in 100 degrees boiling water and soaked for too long, the more caffeine and tea polyphenols will be released, and the tea will easily become bitter and astringent, even completely overshadowing the sweet taste of the tea, which will be difficult to taste. On the contrary, if the temperature of the tea is too low and the soaking time is short, the tea has only the sweetness of theanine acid and does not have the sweet taste of the tea, so that the taste of the tea will appear too weak, or the so-called "water taste" will appear.
