The mocha pot, like the espresso machine, uses pressurized extraction, so it can also extract similar high-concentration coffee with golden oil on the surface. But the question arises. With such a huge price difference, can the coffee brewed in the mocha pot really replace the espresso extracted by the espresso machine? This is a question that Qianjie often receives recently. Let's talk about the conclusion first! If you just want the coffee brewed in the mocha pot to serve as a base like an espresso to make a variety of fancy coffees, of course you can. But if you want to use mocha pot coffee to completely reproduce the expression of espresso, such as taste and taste, then it will not be possible, at least it will be very difficult. Why? Because the extraction pressure of a mocha pot is not as high as that of a coffee machine! Although the mocha pot and the espresso machine are both pressurized extractors, the pressure used by the mocha pot to extract is much less than that of the espresso machine! The extraction pressure of a general espresso machine will be around 9bar, while the extraction pressure of a dual-valve mocha pot will be between 3 and 4bar. The difference is 2 to 3 times. The main reason for such differences is that they have different design principles.

The pressure of the espresso machine is provided by an independent pressure pump in the body. After the extraction starts, the pressure pump will start to operate to apply high pressure to the water flow to extract coffee quickly and efficiently; while the mocha pot relies on heating the water source. The water vapor pressure is generated to push the water flow to carry out extraction, but because the pressure is limited by the heat source and the structure of the pot body, the extraction pressure of the mocha pot will not be so high. Because the pressure is not as high as that of an espresso machine, a mocha pot cannot quickly extract a cup of high-strength coffee in a short period of time like a coffee machine. Qianjie often shares an example of using the same amount of powder, grinding the same powder, and then using a mocha pot and a coffee machine to extract the same liquid weight. When using a mocha pot for extraction, Qianjie will specially extend the extraction time by reducing the firepower when the liquid is discharged. But even so, the final coffee will be much lower than espresso.

The coffee beans used in Qianjie are the classic mixture of Qianjie in the bean list. The powder quantity is 20g, the grinding degree is 1.0 of Galileo Q18, and then 40ml of liquid is extracted. By measuring, the concentration of mocha pot coffee will be much lower than that of espresso. The taste is similar. After all, they use the same classic mixture. Not only that, when we make coffee that requires high concentration like Dirty, mocha pot coffee cannot be replaced. Since the concentration is not as high, when we use mocha pot coffee to make Dirty, the layering effect will quickly lose. Not just the concentration, we can also see from the comparison chart above that the "fat" of mocha pot coffee is also thinner than that of espresso coffee. Similarly, this is also caused by insufficient pressure. Although we can see that the coffee is very rich in "grease" when it comes out of the mocha pot, in fact, most of it is the foam produced by being squeezed by the valve. They are much less stable than the bubbles (oils) of espresso coffee, so they dissipate quickly shortly after the coffee is made.

So we can know that mocha pot coffee can be used as a base to make most fancy coffee like espresso, but it cannot be completely replaced. After all, the mocha pot/mocha pot coffee was not born to replace coffee machines/espresso (and couldn't replace them), but to give everyone a more convenient coffee-making tool.
