The chemical research team at Essen University in Duisburg, Germany, used a pulsed laser to illuminate a mixture of coffee powder and water, making a cup of cold-extracted coffee in just three minutes.
Some people may wonder if the laser will not heat up this cup of coffee instantly. However, according to the introduction, the whole process, the laser heated the coffee liquid about 5 degrees Celsius.
In addition, the researchers compared coffee extracted in three minutes with cold coffee extracted for 24 hours and coffee extracted by traditional hot water. As a result, the researchers found that: in terms of acidity, the coffee brewed with a laser for 3 minutes was almost the same as a 24-hour cold brewed coffee, while the acidity of the two mentioned above was significantly lower than that of coffee extracted by hot water; at the caffeine level, laser-extracted coffee contains less caffeine than traditional cold-brewed coffee.
Pulsed laser-accelerated extraction of cold-soaked coffee can shorten the extraction process that would have taken hours to just a few minutes, opening up many exciting possibilities for cold-extracted coffee. However, this technology now exists only in science laboratories and has not yet been popularized.
The research team has high hopes for the commercialization of pulsed laser coffee extraction and plans to develop it, according to technology media Slash Gear. Maybe in the near future, we will see the scene of baristas using laser to extract coffee in cafes.
