After a day, she went to Qianjie again and said that the coffee brewed out according to your method was not very good. After some negotiation, Qianjie finally understood that this friend could not drink too much coffee a day. So her one-person standard is 7 grams of coffee powder, that is, 7 grams of powder is used as the brewing standard.

So Qianjie is going to discuss how to make a small amount of coffee today. What is the difference between a small amount of powder and a normal amount of powder? What is a small amount of powder? This is for the filter cup we use, for example, the Hario V60 filter cup has two models, type 01 and type 02, the difference between them is that the size is different, type 02 can hold more coffee powder. The usual amount of coffee powder in the front street is 15 grams, which is just right for the 01 filter cup, which is the normal amount; for type 02, it is a small amount of powder, and it is not easy to brew and brew too little.
If you use the 01 filter cup, there is no problem in brewing 15 grams, or 13 grams, 18 grams, or 20 grams of powder, because they all belong to the reasonable capacity of the 01 filter cup, and the change of the powder layer will not be too obvious. Therefore, if you brew coffee with too little powder, and then use the parameters of the normal amount of powder, it is easy to have a thin coffee with insufficient flavor. How to adjust the method of measuring small powder by hand? In fact, there are only two core problems with the amount of small powder. the first is that it is too fast under the water, and the smell of coffee is over before it is fully flushed out. The second is that water injection becomes more difficult, when the amount of powder is more, the total amount of water injection is also more, so the unit risk is less. For example, if the water injection is unstable and it is easy to pour water into the filter paper, suppose there is a mistake of flushing on the filter paper from both 10 grams of powder and 20 grams of powder. then the negative flavor shown by this mistake, the flavor change of the cup with 10 grams of powder will be more obvious. Moreover, due to the characteristics of the conical filter cup, the amount of powder is less, the area of coffee powder on the surface will be smaller, and it is easier to inject water on the edge of the filter paper.
So Qianjie gives two suggestions. The first is to have confidence in your own water control. Only one parameter needs to be changed, that is, the degree of grinding. Qianjie uses V6001 filter cup to test, and thinks that 7 grams of powder is the "limit" of this filter cup, and it will be difficult to get out of the original flavor if it is less. So Qianjie used 7 grams of powder for demonstration. The degree of grinding is a little finer than the normal amount of 15 grams of powder, for example, the grinding degree of the normal amount of 15 grams of powder is 10 degrees of EK-43s, and the grinding scale of 7 grams of powder is 9.5, which translates to about 85% of the screening rate of No. 20 screen. Other parameters remain the same, the water temperature is 91 degrees Celsius and the ratio is 1:15. When injecting water, the three-stage type is still used. in the first stage, the 15ml is steamed for 25 seconds, and the water flow is controlled when injecting water. In the second stage, 45ml is injected around the circle, the end time of water injection is 40 seconds, the remaining 45ml is injected at 60 seconds, the end time of water injection is 1 minute 15 seconds, and the time for coffee liquid to flow into the pot is 1 minute 45 seconds.
If you have no confidence in your water control technology, then adopt the second water injection scheme, with the same parameters as the first one. When injecting water, first use 20ml water to steam for 30 seconds. Then a large flow of water is injected into the 30ml in the middle around the community, raising the liquid level to 1max 2 of the height of the entire filter cup.
The time for the end of water injection is about 40 seconds, and the remaining amount of water observes the liquid level. As long as the liquid level drops slightly, the central water injection will lift the liquid level to the original height (the number of sections depends on the actual situation. Qianjie usually adds 3-4 sections when cooking). The only requirement of central water injection is that the flow is vertical. Until the amount of water injection reaches 105ml, stop the water injection. The final extraction time is about 1 minute 30 seconds to 1 minute 50 seconds.
