There are often some younger friends who want to find the opportunity to experience here in Qianjie because they have not tasted Luo Dou. But you know, Luodou such a "good thing" in front of the street will not be taken out at will, unless you first sign a guarantee that will not give bad reviews!

It's a joke! Today, Qianjie is going to come to share with you what it will be like to use hands to "cook" Luodou. Before that, let Qianjie shallow popular science, what is Luodou in the end?

What is "Luo Dou"? "Luo Dou" is an abbreviation for "Robusta". Because the coffee made with this variety has outstanding characteristics, it has been nicknamed separately. There is absolutely no intention to isolate it. There is a very obvious difference between Robusta and Arabica in appearance. The middle line of Luodou is a straight line, while most of the middle line of Arabica is curved and not straight!

At present, the main varieties of coffee with commercial value on the market are Arabica and Robusta. However, Robusta has not been widely spread in the field of boutique coffee because of its poor flavor. But Luodou is not without any advantages, for example, it has a very large amount of fat! Fat can give beans more mellow taste. As a result, it often appears as a member of Italian beans. In addition, its price is very suitable, which is about half cheaper than that of Arabica. Therefore, Luodou will be preferred in the use of raw materials such as instant and freeze-dried coffee products.

From the above we can know that if you want to find a coffee shop on the market that uses Robusta as hand-flushed beans, the chances are very small (yes, not much). Therefore, Qianjie will give you a good feeling today to see what it will be like to use Luodou to make hand-made coffee.

The Luodou used in front of the cooking experiment comes from Vietnam and uses deep baking, so we will use the extraction parameters of deep baked beans to "cook" it! Use filter cup: Kono filter cup powder quantity: 15g grinding scale: ek43 11 scale (20 sieve pass rate 70%) powder water proportion: 1:15 water temperature: 88 degrees cooking method: three-stage first, we still use twice the amount of water for steaming (30ml)! After 30 seconds, we use a uniform small flow to inject the second stage of hot water (120ml) around a large circle; finally, we use a large flow of water to inject the remaining third stage of hot water (75ml) around a small circle at a uniform speed in the center of the filter cup; then we just need to wait for the dripping and cooking to be finished!

In the process of cooking, we can clearly feel the wet aroma of hazelnut and caramel. And the aroma spread so quickly that it soon filled the whole Qianjie store. In the taste, caramel, cereal flavor is very obvious, but more or mugi-cha taste, the taste is very mellow, but the bitter taste is good! The newly flushed Robusta is still pretty good.

But after placing it for a while, its shortcomings were exposed after the temperature dropped. The taste of grain is heavier, with a hint of rubber, low cleanliness, mixed with the fishy smell of soil and bitter tail, the negative feeling is very obvious. As we can see from above, the taste of Robusta is really not good enough. This is largely due to its caffeine, chlorogenic acid is higher than Arabica, with the blessing of these two bitter contributors, Robusta will be much more bitter than Arabica. Moreover, the commercial bean tasted on Qianjie is Robusta's commercial bean, which is planted below 800 meters above sea level, which leads to its rapid growth and inability to fully absorb nutrients. Therefore, the flavor will also have some defects! But Robusta is not all bad, and now some people try to cultivate a "boutique" Robusta by applying the way of planting Arabica to Robusta's planting, and it has indeed been done! This kind of high-quality Luodou tastes very clean, although the flavor still revolves around the original caramel, grain and hazelnut, and does not change much, but on the whole it is still very good. However, due to the scarcity of the number, it is difficult to spread to China to be experienced by us. So, you can't enjoy the good things in front of the street. You happen to have friends next to you, so let's feel the "beauty" of Robusta together.
