This is not the first time Erida Manor has won the championship, it has won countless awards. Well, today, Qianjie will come to share what is the sanctity of Alida Manor, which has won many championships.

Erida Manor is the first summer double champion in the history of BOP and the second largest winner of BOP championships in Panama (the first is Emerald Manor). In 2018, Erida Manor was officially upgraded to a century-old manor because it was born in 1918, shortly after the opening of the Panama Canal.

Elida Estate Manor was born in 1918 in Robert Lamastus, Kentucky, USA. It was founded near Mount Baru in Pokuet, Panama. The name of the manor was emphasized many times when introducing Alida Manor, because Mr. Robert was named after his wife.

Since the establishment of the estate, Mr. Robert has focused on the production and cultivation of high-quality coffee. And his love for coffee seems to be engraved in the blood and continues in the blood. Today, Alida Manor has been handed over to the fourth generation of the Lamastus family, each of which expresses its enthusiasm and importance for coffee in different ways. In recent years, the Lamastus family has bought a brand new high-altitude manor, Trompo Estate (Top Manor), which is the family's fifth manor. Although the Lamastus family owns five estates in Panama, only three can produce coffee so far. And each of these three manors is a well-known Panamanian manor! In addition to our protagonist Arida Manor, there are: donkey Manor, Louito Manor. Because the area where the three manors are located is very different, so there will be a certain gap in the local environment when coffee is planted. It is the existence of these gaps that make the coffee produced by each manor have its own unique characteristics.

Turning back to Alida Manor itself, Arida is the largest and highest farm of the three estates, covering an area of 65 hectares! Although it covers a large area, but the usable area is not so much (in terms of growing coffee)! Because more than half of Arida Manor is located in the Baru Volcano National Park, all trees in this park are prohibited from being felled and are a natural environment protected by the state. So if you come and go, only 30 hectares of 65 hectares can grow coffee. But even so, the excellent planting environment (microclimate, volcanic soil, original ecology) and towering elevation have laid a solid foundation for the delicacy of Alida coffee. Of course, this is inseparable from the Lamastus family for coffee harvesting, processing, every link of strict and careful care. Because of this, the coffee produced by Alida Manor can make people linger and have a long aftertaste.

Over the years, Alida Manor has grown three main varieties: the old tin card, the new generation of Kaduai, and the current coffee king-Rose Summer. Erida Manor was also one of the members of Rose Summer, which was stunned by Emerald Manor on BOP in 2004, so the third-generation landowner Wilford Lamastus, like other landowners, embarked on a rosy summer planting trip. In 2005, the following year, Arida Manor and Donkey Manor began to plant Rose Summer. You know, Alida Manor is also particular about the distribution of different varieties. Kaduai is planted below 1650 meters, while Rosa is up. The higher the altitude of planting, the more severe the temperature will be. Although this will prolong the growth cycle of Rosa, beans can accumulate more delicious materials.

Because the estate is located on a steep hillside, high and low, and has a wide area, Erida Manor has also divided the land into seven plots, from bottom to top: Plano Lot, Falda Lot, Aguacate, Aguacatillo, Vuelta (the production of this year's championship), Loma centro and Torre Lot (the most award-winning plots). Due to the differences in elevation and climate between plots and plots, the coffee produced by different plots will have different characteristics.

Because three generations of manor owner Wilford Lamastus has a higher pursuit for the quality of coffee, so he invests a lot of manpower and time at all costs in order to create a perfect quality of coffee. When the coffee fruit grows to a burgundy color, workers will come out and harvest it quickly, and then non-stop transport the coffee beans to the processing plant for processing. Because the treatment plant is located at the bottom of the manor, it takes less than half a day for the fruit to be picked and put into processing. This can prevent the coffee fruit from pre-fermenting in the bag because it takes too long to transport, which is simply to reduce the unstable factors that cause the impact.

When it comes to the treatment of coffee beans in Alida Manor, in addition to the traditional methods such as sun exposure, water washing and honey treatment, even the anaerobic treatment is also involved. As Mr. Wilford Lamastus, the owner of the third-generation manor, said in an interview, as long as the treatment does not mask the coffee flavor of Rosa itself, it will be worth a try. So we can often see the active figure of Alita coffee treated by anaerobic treatment in the major coffee competitions.

On the other hand, although Erida Manor uses the usual way of handling coffee, they have made some adjustments in the process of handling it. For example, sun treatment! The traditional method of sun treatment is to dry the coffee fruit to a specified moisture content range, and then remove the shell. And Alida Manor will also stack the coffee fruit, thick to a certain extent before starting the sun treatment process! The advantage of this is that it can prolong the drying time of the coffee fruit, so that the beans themselves can carry out more fermentation, and then transform into more rich flavor substances.

This rosy summer comes from the skirt plot of Arida Manor 1750 meters above sea level, because the pronunciation of the English name "Falda" is very close to our Chinese word for "developed", so the skirt land has the nickname "developed land". And this rose summer is relatively medium in size and density, so it will have a larger heat absorption in the process of baking, and the process of Mena reaction will be faster.
