In 1925, a Frenchman who emigrated to Panama bought a piece of land in Poquet to grow coffee. Because the location was originally used for livestock farming, Mr. Aristides Boutet, who bought the land, named the estate Donkey Manor.

Donkey Manor

Donkey Manor is located in the Pokuit Baru volcanic Mountains in Panama. I believe everyone has found that many famous Panamanian estates are gathered here. Because here has very excellent local resources, such as Panama's unique micro-climate!

We can see from the map that the whole topography of Panama is in the shape of S from east to west. Every winter, two streams of air collide at high altitudes in the Central Mountains! One is the cold current of Florida from north to south, and the other is the warm and humid air stream of the Pacific Ocean from west to north.

When two distinct streams of air collide, there will be changeable winds and frequent rainfall in the area. The formation of these climates will give the local temperature and rainfall which are very suitable for plant cultivation! So it is often said that this is Panama's unique and important resource. The Donkey Manor is located near the mountains, so it is also a beneficiary of the climate.

In addition, we have to mention Mount Baru, because Panama's main coffee producing area revolves around this volcano. Fertile volcanic soil is rich in organic matter, the existence of potassium, phosphorus and other substances help to provide a huge amount of nutrition for the growth of coffee, resulting in a more excellent coffee flavor. Therefore, this land is also known as the "promised land of coffee".

Speaking of Mr. Aristides Boutet, he is not only the founder of Donkey Farm, but also the grandfather of Mr. Wilford Lamastus of the Lamastus family. And it is because of this relationship that Donkey Manor has become a member of the Lamastus family.

For a long time in the past, the coffee market was in a state of oversupply, which led to a persistent downturn in the price of coffee, which many landowners failed to survive and had to sell their coffee estates, including Mr. Aristides Boutet. Mr. Wilford and his brother Patrick Lamastus couldn't bear to let the donkey farm fall into the hands of outsiders, so they bought the donkey farm and continued to run it.

Donkey Manor is slightly smaller than Arida Manor, only about 50 hectares, but it is also a considerable piece of land. Like most estates in the Pokuit region, Donkey Manor is partly located in Panama's National Forest Park. Because the forest is protected by the state, felling is strictly prohibited, so this part of the manor cannot grow coffee, about 20 hectares.

Excluding the 20 hectares that cannot be planted, the remaining 30 hectares are allocated by the Lamastus family as follows: 10 hectares as a reserved area and 20 hectares for coffee beans, with the main varieties being Rosa and Kaduai.

But for the situation at that time, the business of the Lamastus family is not optimistic. Therefore, in order to ensure the operation of the manor and maintain daily life, the family also have to engage in other jobs to obtain the funds to ensure a living and run the farm.

With the continuous persistence of the Lamastus family, the manor was finally able to see the sun and welcome its own spring. Donkey Manor has been winning awards since 15 years and has become the most successful coffee house in the Best Panama (BOP) competition. Even in 2016, the contestants from Maruyama Coffee in Japan won the championship with the rosy summer of Donkey Manor!

So, the whole front street came to a donkey manor to taste the delicious summer! That's right! It's just greedy! This rose summer is treated by the sun. Sun treatment is directly attached to the shell with meat to dry the whole coffee fruit, and then dry to a certain range of moisture content, the time will be about 2 to 4 weeks, and then use the shelling machine to remove the shell of the beans, the raw bean processing is complete!

Sun-treated coffee beans will have a fuller flavor layer, so Qianjie will use a medium-to-shallow roast to better explain its excellent flavor.

Eight hours after the baking, Qianjie immediately tested it! In terms of dry fragrance, this donkey manor sun roses in summer exudes a strong smell of oranges and flowers. After the taste of broken dregs, we can feel the round acidity of green and apricot peaches, the high sweetness of dried oranges and longan, accompanied by elegant floral fragrance and a slight sense of fermentation.
