In addition, the unique wet planing method creates a unique flavor of Mantenin coffee. The wet planing method is also known as wet shelling (Wet Hulling) and is also known locally as Giling Basah. In Indonesia, it is humid and rainy, and there are often typhoons, so it is difficult to reach the weather needed for sun treatment, so the wet planing method was born.

The wet planing method starts with the front part similar to the washing method. After the coffee berries are harvested, the coffee berries are floated with clean water, then the peel and flesh of the fruit are removed, and the pectin and sheep skin are retained for fermentation. After the fermentation is completed, it is placed in the sun to dry, and when the moisture content of the coffee bean reaches about 30% to 50%, the sheepskin of the coffee bean is removed by a shell planer, and the final drying is carried out until the water content of the coffee is reduced to 12%. This can greatly shorten the drying time and make the coffee beans dry more quickly.
