Can the cold extract coffee be heated? But strictly speaking, the heating of cold-extracted coffee is not impossible. Why? Because cold-extracted coffee mainly refers to the way of extracting coffee at low temperature. Whether it is drip-type iced coffee or soaked cold-soaked coffee (also called cold extract), they all belong to a kind of cold-extracted coffee. Because they all use cold water to extract coffee, rather than the hot water used in other coffee-making methods. In other words, coffee extracted with cold water can be called cold extracted coffee.

After heating, through tasting, we can feel that the aroma of whisky is obviously weakened, the bitterness of chocolate is enhanced, and the acidity of some berries is also magnified. The flavor is: chocolate, berries, nuts, whisky, the taste is sour, a little bitter, the sweetness is lower, the taste is not so soft, but still smooth.

It's okay, it's not as strange as I thought. In fact, Qianjie expected such a result before cooking, because just like the latte and hand heating experiments done in Qianjie, we will change the flavor and taste of coffee when we heat coffee, so Qianjie is psychologically prepared before heating cold coffee. There are two reasons: the first is that the flavor of coffee mainly comes from aroma substances, most of which are volatile. Therefore, when we heat up, the originally slowly volatile coffee flavor substances will accelerate the loss, when the coffee heating is completed, some flavor performance will not be as outstanding as before.

The second reason is that temperature changes the ability of our taste buds to perceive taste. As mentioned in the front street, cold-extracted coffee is less sour and bitter in part because the low temperature of coffee lowers our perception of both. When the temperature of the coffee rises, the taste buds' ability to perceive both has been improved, so the sour and bitter taste of the coffee will be more prominent, not as soft as before.
