Since the last century, Blue Mountain Coffee has been famous all over the world for its full and solid aroma, balanced flavor and mellow taste, and was once known as the "Coffee Emperor". In addition, how did Blue Mountain Coffee come from such a rich and mellow taste?

Here we will mention the unique island-type planting environment in Jamaica. Jamaica is an island country in the Caribbean, located in the volcanic earthquake belt around the Pacific Ocean. Coffee is mainly grown in the famous Blue Mountains Mountains, which itself is a volcanic mountain range that erupted many years ago, bringing mineral-rich volcanic soil here.

Moreover, the Blue Mountain is the highest peak in the entire Caribbean region, so the air is fresh, the climate is humid, and it is foggy and rainy all year round, providing an ideal growing environment for coffee cultivation. Under the influence of high altitude, there is a large temperature difference between day and night, and the coffee fruit has more growth time to develop the flavor, so the coffee produced is rich and mellow, and the flavor is balanced.

The main variety of Jamaican coffee is Typica, which is one of the oldest coffee varieties in existence. It is very suitable for growing in high altitude areas, where it can have excellent flavor and quality. However, the variety is also fragile, extremely vulnerable to leaf rust, vulnerable to nematodes and berry diseases, and the yield is not high.

In addition to the high-quality planting environment, it also needs more careful care and cultivation in order to show the high-quality flavor and taste of the variety. Therefore, under the persistence and careful care of Jamaica for many years, the tin card in the Blue Mountains can well adapt to the local climate and soil, has excellent flavor and evolved good disease resistance.

And in the past, farmers were more interested in yield, but Jamaica has a small area and is difficult to grow coffee on a large area or on a large scale, so the country can only increase its market share by improving the quality of coffee.

As a result, Jamaica has issued a series of strict standards. According to the regulations of the Jamaican Agricultural Commodities Authority (JACRA), only iron card varieties grown in the four districts of St. Andrews (St.Andrew), St. Thomas (St.Thomas), Portland (Portland) and St. Mary's (St.Mary) and growing in this area at elevations between 915m and 1700 m can be named Jamaican Blue Mountain Coffee (Jamaica Blue Mountain). Coffee produced in other areas can only be exported to Jamaican alpine coffee and Jamaican preferred coffee.

Due to the high altitude, planting management and picking are more difficult, the picking process is almost completed by local skilled female workers, choosing just the right mature coffee beans. After that, it will be sent to the treatment station for washing treatment, during which there is a special person responsible for quality supervision, which can maximize the aroma of coffee beans and show their basic flavor.

JACRA will also grade raw beans according to their specifications, defect rate and cup flavor test. Blue Mountain Coffee is divided into four grades: No. 1, No. 2, No. 3 and hand-selected PB. All exports need to pass JACRA quality testing, the highest grade of Lanshan No. 1 coffee requires coffee bean specifications between 17 and 18 mesh, defect rate less than 2%, moisture content about 10-12.5%, and cup test flavor to meet the standard.

In order to ensure quality and insulate coffee beans from the risk of being contaminated by light, odor and other bad odors during transportation, Jamaica has always insisted on the use of traditional wooden barrel packaging for high-quality Blue Mountain coffee. Only in this way can its original flavor be maintained.

Therefore, when receiving raw beans, the coffee particles are uniform and full and of uniform size. through the cup test in the front street, it is found that there will be chocolate and nut flavor, the overall flavor is balanced, and the taste is mellow and silky. In order to highlight these characteristics of Blue Mountain Coffee, medium-depth roasting will be used. The Blue Mountain Coffee on the front street is from Clifton Manor in St. Andrews. After brewing, it will have dark chocolate, nut and caramel flavor, creamy smooth taste, moderate mellow thickness, sweet finish and overall balance.
