What coffee beans are suitable for the Mocha pot coffee machine? What coffee beans are suitable for cold extraction? How do newbies choose coffee beans?
Front Street often receives many questions like "What beans are suitable for a mocha pot?""What beans are suitable for a coffee machine?" or "What beans are suitable for cold extraction?" Many friends who have just started will always mistakenly think that a certain extraction method will have the most suitable coffee beans, but in fact, whether it is a mocha pot or a coffee machine, they are suitable for extracting all coffee beans, and there is no saying that they are suitable or unsuitable. The so-called suitability actually refers to whether the extracted coffee meets your needs, that's all.
So instead of asking XXX what beans are suitable for extracting, it would be more appropriate to ask what kind and type of beans you want. So today, Qianjie will come to share with you how to accurately find the coffee beans that suit you when starting!
First of all, we need to know what flavor we like. Qianjie still recommends that everyone make a preliminary selection based on their taste preferences: do you like the coffee with sour taste and rich layers to drink; or you like the bitter coffee that tastes mellow. They correspond to lightly roasted sour coffee and deeply roasted bitter coffee. The taste of coffee will be affected by the degree of roasting! When the degree of roasting of coffee beans is shallower/shorter, the more sour substances of the coffee itself are retained, and the taste when drunk is mainly sour; while when the degree of roasting of coffee beans is deeper/longer, the sour substances of the coffee itself will be worn away, and at the same time, the bitterness will be increased and the sour taste will be concealed. The main taste will be bitter.
So, if you want to drink a cup of coffee that tastes sour, sweet and sour, then you can choose light, medium and light roasted coffee beans; and if you want to drink a cup that tastes bitter and has a strong burnt aroma, then you can choose medium, medium and deep roasted coffee beans.
However, because most merchants will not print the roasting degree of coffee beans on the label, when buying coffee beans, you can guess an approximate roasting degree by asking the merchant or based on the flavor introduction on the label. For example, with fresh flavor descriptions such as berries, citrus, floral flowers, etc. belonging to fruits and flowers, then the bean is likely to have a light or medium light baking degree; if it is: chocolate, nuts, cream, caramel, toast and other flavor descriptions, it means that most of its baking degree is relatively deep.
Then, the "flavor" is accurately determined according to the processing/production area. After we have selected the roasting degree of the coffee beans, we can then start to further screen out the coffee beans we like based on other information on the label. The easiest way is to describe the flavor and see if there is a flavor you like on the flavor description to make a decision. If you want something more specific, such as a special taste, rich flavor, or cleaner, you can accurately determine the "taste" through the processing method and production area of the coffee beans.
Then Qianjie will start with the treatment method! It is well known that different treatments will allow coffee to develop different characteristics because of their different degrees of fermentation. The more common treatment methods on the market mainly include sun exposure, washing, honey treatment, and anaerobic treatment, so Qianjie's sharing this time mainly focuses on these four treatment methods. If you want to drink coffee with higher cleanliness and brighter acidity, you can choose washed coffee beans. Because the water washing treatment almost removes the pulp pectin except for coffee beans at the beginning, relatively few substances participate in the fermentation, and the coffee can better highlight its own variety and regional flavor. (For example: Front Street Panama Poquet Guisa, Kenya Asalia)
If you want to drink ones with higher complexity in flavors and richer levels, you can choose sun-treated coffee beans. Because the whole coffee bean is directly put into drying and fermentation, there are more substances involved in the fermentation, and the flavor developed will be richer. (For example: Qianjie Ethiopia·Huakui, ALO)
Honey treatment lies between sun exposure and washing, because it removes the peel and pulp and retains the pectin for drying and fermentation, so its drying time will be shorter than sun exposure and longer than washing. If you like coffee with high sweetness and rich flavor, honey processing will be a good choice. (For example: Front Street Colombia·Hope Rose Summer, Costa Rica·Rose Summer)

The fermentation degree of most anaerobic treatments is usually higher than that of the first three, so its flavor complexity and recognition will be relatively high (most). Anaerobically treated coffee beans generally have a clear fermentation feeling, so if you like friends who have high flavor recognition and can accept the fermentation feeling, then it is the right choice to choose anaerobically treated coffee beans. (For example: Qianjie Boundary Estate·Xizhao, Big Navel)
A cliché:"Oranges grow in Huainan, and oranges grow in Huaibei, they become trifoliate. "Coffee grown in different producing areas will have completely different flavors! Therefore, we can also make careful selection based on the production area ~ If you want to drink some fresh and fruity coffee, then the choice of production area can be framed in Ethiopia, Kenya, Panama, Colombia... If you want to drink something more mellow and nutty and chocolate-flavored, you can choose: coffee beans from Brazil, Indonesia, Jamaica and other producing areas. Most beans in these producing areas use deep roasting and cooking; If you want to drink a sweeter or more balanced type, you can choose coffee beans from Costa Rica, Papua New Guinea and other producing areas.
In addition to this... In addition to taste, Qianjie believes that what you may want is that coffee beans can have some special functions, so Qianjie also listed two things that you can think of: If the coffee beans you want are able to extract rich fat and the taste will not be easily concealed by milk after making into milk coffee, then it is best to choose deep-roasted/or coffee with beans; If you want coffee beans with low caffeine and can not affect sleep, you can choose decaf coffee. For example, the Colombia and Swiss washed decaf in the front street bean list is a very good choice ~
