First of all, we need to know what flavor we like. Qianjie still recommends that everyone make a preliminary selection based on their taste preferences: do you like the coffee with sour taste and rich layers to drink; or you like the bitter coffee that tastes mellow. They correspond to lightly roasted sour coffee and deeply roasted bitter coffee. The taste of coffee will be affected by the degree of roasting! When the degree of roasting of coffee beans is shallower/shorter, the more sour substances of the coffee itself are retained, and the taste when drunk is mainly sour; while when the degree of roasting of coffee beans is deeper/longer, the sour substances of the coffee itself will be worn away, and at the same time, the bitterness will be increased and the sour taste will be concealed. The main taste will be bitter.

So, if you want to drink a cup of coffee that tastes sour, sweet and sour, then you can choose light, medium and light roasted coffee beans; and if you want to drink a cup that tastes bitter and has a strong burnt aroma, then you can choose medium, medium and deep roasted coffee beans.

However, because most merchants will not print the roasting degree of coffee beans on the label, when buying coffee beans, you can guess an approximate roasting degree by asking the merchant or based on the flavor introduction on the label. If you want something more specific, such as a special taste, rich flavor, or cleaner, you can accurately determine the "taste" through the processing method and production area of the coffee beans.

It is well known that different treatments will allow coffee to develop different characteristics because of their different degrees of fermentation. The more common treatment methods on the market mainly include sun exposure, washing, honey treatment, and anaerobic treatment, so Qianjie's sharing this time mainly focuses on these four treatment methods. If you want to drink coffee with higher cleanliness and brighter acidity, you can choose washed coffee beans. Honey treatment lies between sun exposure and washing, because it removes the peel and pulp and retains the pectin for drying and fermentation, so its drying time will be shorter than sun exposure and longer than washing. The fermentation degree of most anaerobic treatments is usually higher than that of the first three, so its flavor complexity and recognition will be relatively high (most).
