What is red-eye coffee? Qianjie has shared before that the most widely circulated "birth theory" of red-eye coffee is like this: red-eye coffee originated in the United States, and the reason for its birth came from its namesake flight-red-eye flight. The sailing time of this flight is very unique. It sets sail late at night and reaches its destination early the next morning. However, because the flight time is usually less than 8 hours, many times after arriving at the destination, passengers on the plane will "rejoice" with eyes that are bloodshot due to being forcibly awakened. So naturally, the originator of the "manufacturing" of this eye was also commonly called a "red-eye flight."

In addition to passengers, there is naturally no shortage of crew members on the flight who escort the journey. But for work reasons, they need to stay awake during the time they should sleep, so in order to stay awake throughout the entire time, consuming coffee is a very good option. As coffee is consumed more and more, the caffeine provided by a single serving of coffee can no longer resist sleepiness. So, one smart person thought of combining concentrated and drip coffee to consume higher caffeine. Then, the practice of mixing espresso with drip coffee was born (so why not drink multiple servings of espresso...).

Since this cup of coffee was born due to red-eye flights, it was named red-eye coffee. In addition to red-eye coffee, what else are there? Black-eye coffee, dead-eye coffee... They have a higher coffee concentration than red-eye coffee because they add more coffee, but whether they taste good or not is another matter ~

How to make red-eye coffee? In the past, red-eye coffee was made as a 30-ml single serving of espresso with 120-ml drip coffee, and the cup size was 150-ml. But because today's extraction methods have changed, and the intensity of the extracted espresso is twice that of the past, if you make it according to the previous amount, this cup of coffee will become high-concentration black eye coffee (Black eye coffee is made from 60ml double espresso and 120ml drip coffee). Therefore, Qianjie recommends that you adjust the amount of espresso (halving) when making it. Of course, Qianjie does not recommend that you try it easily, especially for some friends who are not so tolerant of caffeine. (But in fact, the caffeine concentration is about the same as the current double concentrate)

In addition to the importance of serving size, we also need to choose the right two coffee beans to use. After all, we focus not only on refreshing effects, but taste is also important when choosing more now. But the choice of coffee beans is not complicated, but very simple. We just need to use two coffee beans with similar roasting degrees to make drip filter and Italian concentrate respectively. Because the roasting degrees are similar, the flavor of coffee is not bad. The blended taste will be relatively consistent, and there will be no sense of inconsistency when drinking. Not to mention that it will taste good, but at least it won't taste bad.

Take the production of Front Street as an example, because the Italian beans used here are Front Street strawberry candy and rose summer combinations in the bean list. It is a moderately roasted coffee bean with a white floral aroma, strawberry, berry, the taste is mainly sweet and sour. Therefore, the beans paired with it are naturally also moderately roasted coffee beans with a mainly sweet and sour taste. The beans selected for Qianjie here are Qianjie Essi Huakui in the bean list. It has the flavors of citrus, apricot, and strawberry. The extraction parameters are as follows: Italian concentration: 20g powder, 30s extraction time, 40ml coffee liquor. Hand-brewed coffee: 15g powder, 1:15 powder-to-water ratio, 10-scale grinding of ek43, 75% sieving rate of No. 20 sieve, fine sugar grinding, 92°C water temperature, V60 filter cup, three-stage brewing and extraction time is 2 minutes. After making the two coffees, we first poured 20ml of espresso into the prepared cup.

Then add 120ml of hand-brewed coffee.

Finally stir well and you can start tasting!

Be reasonable, it's okay! The taste of this cup of red-eye coffee is just as expected by Qianjie, only a little higher than the concentration of regular hand-brewed coffee. For Qianjie, which requires early concentration all year round, this flavor concentration is still acceptable. However, the performance of the flavor surprised Qianjie. It was very surprised that the flavor of the two beans was very perfect without any awkwardness! You can clearly taste the flavors of white flowers, strawberries, citrus, and apricot peaches. The overall taste is balanced between sweet and sour, and the taste is mellow. The aftertaste is oolong tea. In addition to the examples listed in Qianjie above, you can also try other combinations yourself. Mix plan, but still the same sentence, friends who can't drink too strong coffee had better not try it easily, because it is still difficult to enter the entrance.
