In addition to the traditional drip brewing, we can also use other methods such as soaking and cold extraction to make black coffee with different tastes. 1. First of all, the production method that Qianjie would like to share with you is drip filter brewing, which means that coffee is extracted by artificial water injection. This is the most traditional brewing method for hanging ear coffee. The advantage of trickle-filter brewing is that it can quickly brew up the rich layers and outstanding flavor of hanging coffee in a short period of time. However, there is a prerequisite for this, that is, we need to grasp the parameters well: the water must be hot enough, the time must be long enough, and The amount of hot water must be appropriate, otherwise it will be easy to brew the coffee taste, and the probability that the final result will be a cup of coffee-flavored water.
Although it may seem complicated, it is actually not that difficult. Because the grinding degree of the hanging ear coffee has been fixed, we can basically use a fixed set of parameters to brew all the hanging ear coffee, but the water temperature needs to be adjusted according to the degree of roasting of the coffee beans. And this is also the convenience of hanging ears. In this article, Qianjie will use Qianjie Essi Huakui's hanging ears to demonstrate most of the brewing methods of hanging ears. When using drip filter brewing in the street, the water temperature will be in the range of 90 - 93°C (for deep-roasted coffee beans, you can use 88 - 90°C water); the ratio of powder to water is 1:15; The extraction time is two minutes (that is, the time when water and coffee powder come into contact).
Because the hanging ears on Qianjie are 10g per pack, according to the ratio of 1:15, the amount of water that needs to be injected is 150ml. The 150ml of hot water will be injected into the front street in five sections, with an average of about 30ml of hot water per section. The purpose of this is to allow more sufficient contact time between the water and coffee powder, and the final taste of coffee will be more intense.
Then, after many experiments on Qianjie, if a 10-g bag of hanging ears is injected into half of the hanging ear bag each time, the water volume will be about 30 - 40ml. In other words, when the water is injected halfway through the ear bag, the water volume is exactly our target water volume for each section. Through such visual inspection, we can estimate the total water injection volume without a scale.

Without saying much, let's share with Qianjie how to make a good cup and hang it in our ears!
①. First, we inject a section of hot water until half of the ear bag (about 30ml), and then wait 20 to 30 seconds before starting to inject the next section of hot water. The purpose of this is to expel the gas from the coffee powder, making it easier for us to rush out the delicious hanging coffee.②. Then, we injected four more sections of hot water according to the planned amount of water. Each section of hot water is poured into half of the ear bag, and then after all the hot water drips, start injecting the next section of hot water.③. When the last hot water is poured out, we can take out the ear bag and enjoy the delicious ear coffee.
The total time was 2 minutes and 05 seconds. The Huakui coffee washed out in this way tastes as Qianjie said. Not only is it very rich in layers, but its flavor is also very outstanding. We can clearly taste the sweet and sour aromas of citrus, cream, strawberries and berries. The taste is light and the aftertaste is the aroma of oolong tea ~
2. Compared with the drip filter method, the second method that Qianjie wants to share is very simple! Because it is an immersion-type extraction, we only need to pour the coffee powder and hot water in the same cup and soak it for a period of time to get a cup of fragrant and balanced coffee! When using this method to make hanging coffee, we need to pay attention to only two extraction parameters: time and water volume. If the water temperature is suitable, you can directly use boiling water for brewing ~ Because the tolerance rate of immersion extraction is relatively high and the bitterness in the coffee powder will not be easily dissolved, the water temperature requirement will not be so high, 94°C. Above water temperature can be used ~
If you want to drink stronger coffee, you can brew it with a powder-to-water ratio of 1:14 or 1:15, that is, a 10g package of hanging ears and brew it with 140ml or 150ml of hot water; If you want to drink something that tastes less heavy, you can use a powder-to-water ratio of 1:16 to 17, that is, 10g of powder and 160 to 170ml of hot water. The extraction time is 7 to 9 minutes, depending on the water temperature used. The higher the water temperature, the shorter the time, and vice versa.①. First, we tear open the hanging ear first, then pour the coffee powder into the prepared container (preferably a container with a diversion port), and place the hanging ear bag aside for later use.②. Then we injected hot water and mixed it with coffee powder. The ratio used in Qianjie here is 1:15, so the amount of water injected is 150ml.③. After filling the water, we take out any tool, stir the coffee (just 10 rounds), and start counting.④. After 5 minutes, we took out our tools and stirred again (just 10 rounds), and then started waiting again. 5. When the time comes to 8 minutes, we can take out the ear bag and put it on another cup. 6. Finally, we only need to pour the brewed coffee into the ear bag, filter out the coffee powder, and remove the ear bag after the filtration is completed, so that a cup of ear coffee will be made.
Compared with the washed out, although the layers of the brewed coffee are not as rich, the balance between mellow and taste will be higher. At the same time, this cup of flowers has a higher sweetness and the aftertaste will be more lasting. Because it uses the hanging ears of Qianjie Esther Huakui, the flavor is still dominated by the aroma of citrus, berries, strawberries and cream, which is very good ~
3. I believe everyone is familiar with this method of cold extraction, because Qianjie just shared it not long ago. We only need to prepare a bottle that can be sealed, then pour the coffee powder and room temperature water in the hanging ear into it, seal it, put it in the refrigerator and refrigerate it overnight. When we get up the next day, we can get a pot of delicious cold extracted coffee.~ Similarly, the coffee beans used in hanging ear are flowers, and the extraction parameters are as follows: powder amount 30g, powder and water ratio 1:10, and refrigeration time more than 8 hours. Since cold extraction coffee uses a relatively large proportion of powder and water, we need to use at least 30g of coffee powder to make a cup of cold extraction. You can also decide how much coffee powder to use based on your own needs.
The first step: We take out the hanging ear and pour the coffee powder into the sealed bottle. Remember to keep the hanging ear bag. Step 2: Inject appropriate amount of room temperature water, because Qianjie uses 3 packs of hanging ear powder totaling 30g. According to the ratio of 1:10, the amount of water injected is 300ml. Step 3: Use any tool to stir the coffee powder and water until all the coffee powder can come into full contact with the water. Step 4: Seal the bottle, then place it in the refrigerator for 8 to 12 hours. (The stronger it gets) Step 5: Take out the coffee when the time is up, and then support the ear bag you left yesterday on a cup. Step 6: Pour the coffee into the ear bag and filter out the coffee grounds. After the filtration is completed, put it in the refrigerator and ferment for 2 hours (or not necessary). At this point, the cold extract coffee is completed.
Huakui coffee extracted using cold extract tastes completely different from the former two! Whether it is taste or taste. In addition to the flavors of citrus, strawberry and berry, the cold-extracted version also has a charming aroma after fermentation. 4. Milk coffee Finally, it is to use hanging ears to make a cup of rich milk coffee to share! There are two ways to make this "dish". The first one is the cold extraction above, which just replaces the water during cold soaking with milk. In other aspects, both parameters and practices are completely consistent. Very simple. Another method is to use hot water to brew a strong black coffee and then add milk. Although the operation is more complicated than the former, it can get a cup of milk coffee faster.
