1. The degree of baking will not be too extreme. If we want to make a Combo with a strong aroma and outstanding flavor, then it is best not to choose very deeply baked coffee beans to make it. Because too deep roasting will add a lot of charred aroma to the coffee, and the taste will be thicker, which will cover up the flavor of the coffee and prevent us from drinking the flavor characteristics of the coffee itself. (It's not that deep-baked beans are bad, but it's just not suitable for this purpose)
Of course, coffee beans roasted too lightly are not suitable! Although lighter baking will not have any charred aroma to cover up the flavor, because there is not enough caramelization reaction, the coffee will not be as sweet and will taste sour. Then, because the flavor and taste are relatively weak, it will easily be covered up by the taste of milk, and the milk coffee made will easily have no flavor.
Therefore, when making Combo, it is best to use some medium to light and moderately roasted coffee beans. When the intensity of the espresso coffee is not high enough or the sourness is too prominent, the milk coffee produced will not taste so good.
