As we all know, hand-brewed coffee and espresso coffee have certain differences in the texture of the coffee they make due to their different extraction methods and filtering equipment. For example, hand-brewed coffee will be cleaner, and espresso will be more mellow. Because of this, friends often come up with the idea of using hand-brewed beans to make Italian style or using hand-brewed beans to make hand-brewed beans. Then there is certainly no problem with such an idea! After all, hand-brewed beans and Italian beans are just different extraction methods, and the so-called hand-brewed beans or Italian beans just means that they will have more advantages when made in a certain extraction method. Therefore, we can use hand-brewed beans for the production of Italian coffee, and Italian beans can also be used for the production of hand-brewed coffee. However, as Qian Jie shared in the article "How to Make Italian Coffee with Hand-brewed Rose Summer Beans", since there is a certain difference in the degree of roasting between Italian and hand-brewed coffee beans, if the roasting degree of the two is too big, we need to pay attention to adjusting the extraction parameters when making it to avoid negative extraction of coffee.

Because in previous tweets, Qianjie had already shared the precautions for using hand-brewed beans in espresso making, what Qianjie would like to share today is-using hand-brewed beans to make hand-brewed coffee. What should we pay attention to?

What should we pay attention to when making hand-brewed coffee with beans? Generally speaking, because Italian style involves the production of milk coffee, the coffee beans used in Italian style coffee are usually roasted deeper in order to reduce the sourness and reduce the conflict with the taste of milk; hand-brewed coffee is more It is to drink the flavor of the coffee itself, so except for individual beans, most beans used for hand-brewed will be roasted lighter.

Then, if everyone is like Qianjie, where the beans used to make Italian style are baked deeply, and then the beans used to make hand-brewed coffee are baked lightly, then when we use deep-baked Italian beans to make hand-brewed coffee, Pay attention should be paid to reducing the extraction efficiency and reducing the risk of over-extracting coffee. So what should I do specifically? It's very simple. Roughing and grinding, lowering the water temperature, shortening the extraction time, etc. are all good choices! But in general, Qianjie Association recommends that you control the degree of abrasion and water temperature, because these two parameters have a significant impact on extraction.

Take Qianjie as an example. In the Qianjie Tmall Taobao flagship store, there is an Italian blend of beans called Qianjie strawberry candy espresso. It is made from coffees from three producing areas: Costa Rica, Colombia, and Ethiopia. The degree of baking is medium to deep, but in addition to the traditional medium to deep flavors such as nut cream, it also has a rich aroma of flowers and fruits. It is a mixed bean that is suitable for Italian style and can also be used for making hand-brewed and cold-extracted coffee.

When using it to make hand-brewed coffee, it uses a coarser grind and a lower water temperature to reduce the risk of over-extraction. The parameters are as follows: powder amount 15g, powder and water ratio 1:15, grinding degree 70%~75% sieving rate of No. 20 screen, brewing water temperature 88°C, matching filter cup Kono, water injection method is three-stage, extraction time is 2 minutes.

The water injection process is as usual, so the front street is skipped directly here. The Qianjie Strawberry Sugar Coffee brewed with this parameter has a high sweetness and outstanding flavor. We can obviously drink the flavors of strawberry fudge, white floral flowers, butter cookies, chocolate, and some berries. The taste is mellow and refreshing. Excellent, very good.

If it is used to make cold extracted coffee, then we can use this degree of grinding, and then the ratio of powder to water is 1:12. If ice is added to drink later, Qianjie recommends adding the powder to water ratio of 1:10. The soaking time is controlled at 8 - 12 hours, then filtered out, and then put into a sealed bottle for refrigerated fermentation for more than 4 hours.

The cold extract coffee made in this way not only has a strong taste, but also has a very soft taste. The coffee will have outstanding flavor and sweetness, making it very delicious ~
