For friends who tend to drink with milk, it is best to give priority to ear bags made from medium and deep roasted coffee beans, such as Qianjie Indonesia Mantinin, Qianjie Colombia Huilan, Qianjie Queen Estate, Qianjie Sirado, Qianjie Blue Mountain No. 1, because they have a longer heating time, more caramelized substances, low acid and mellow taste, and a more fluffy structure. Hot water can easily extract the rich aroma and form a good pair with milk.

Method 1: Stirring method

In the framework of making coffee in hand, there are many methods to increase the concentration, such as adjusting the grinding degree, increasing the water temperature, reducing the proportion, and changing the method. However, the powder amount and grinding degree of the ear bag, and even the structure of the filter bag cannot be changed, so there is not much room for display. If you want to have a higher concentration, it is best to rely on the help of external force. Qianjie summarized two sets of methods that can directly increase the concentration of hanging coffee.

Compared with conventional hand-flushed filter cups, the ear bag generally has less than 1/3 of the contact area. The injected water flow makes it difficult for the coffee powder to form a large movement range, resulting in low extraction efficiency. At this time, Qianjie will use a small spoon to stir the powder layer to help it accelerate exhaust and release more soluble substances.

Here we use a 10-g pack of Qianjie Brazilian Silado Hails. The conventionally brewed black coffee will present the aroma of cream nuts, peanuts, chocolate, and caramel. Boil the water, open the lid and let it cool for 1 minute.

Stop, stir in the same way for 3 to 5 times, wait for the coffee liquor to dry, and then add water for the last time. This time we have to fill it up until the water flows into the cup. We can get a cup of about 90 to 110ml espresso liquor.

Method 2: Repeated brewing method

No matter which form of extraction, the release order of coffee liquor changes from strong to weak. The less water, the stronger the coffee, and the more water, the weaker the coffee. When we want to get a high-concentration hanging coffee solution, we might as well try to extract it repeatedly with the least amount of water to dissolve more flavor substances.

Prepare two clean cups, put the front street Brazilian Sirado on one of the cups, and inject 80% full hot water. After the coffee has finished flowing, continue to inject water for the second time. This time, fill the filter bag, and then wait until the penetration is over, transfer the filter bag to another cup. Then, Qianjie will pour the freshly washed coffee liquor into the hanging ear again and carry out the second extraction. The purpose is to dissolve more middle and later substances. When the coffee in the filter bag has completely penetrated, we will repeat this operation once, allowing the hanging ear to undergo three extraction times in total.

In the end, we will get a cup of concentrated liquid of about 80 to 100ml, and we will still pour the same amount of warm milk at a ratio of 1:1. Because the coffee liquor will continue to cool down during repeated extraction and milk is added, there is no over-extraction taste. The coffee also has a faint aroma of nuts and peanuts.

Method 3: Milk brewing method

Qianjie has shared the method of changing water for milk to make coffee several times. In fact, hanging ears can also work, but some small details need to be paid attention to.

Use a 10g package of Qianjie Brazilian Cirado for hanging ears. First, inject hot water above 90 ° C into half of the filter bag, and be sure to wet all the coffee powder; after the hot water has finished dripping, start heating to 60~75 ° C hot milk (which cannot be touched by the hand) is poured into the powder layer until the filter bag is 9 minutes full. When the coffee liquor is about to run dry, you can continue to inject the third section to 9 minutes full. The total amount of water and milk is 150g. If you like something with a stronger milk flavor, Qianjie suggests adding another paragraph, which is also until 9 points full.

If you prefer iced coffee, it is best to extract it in a cold brew form. The operation is very simple. After taking out the ear-hanging bag, you don't need to tear it apart. Just peel off the paper shell on the package, and then throw it "naked" into a bottle of about 200ml milk (drink one sip first). After tightening the cap, shake it up and down vigorously, put it in the refrigerator for 8 hours, and you can start drinking after picking out the coffee bag.

Method 4: Add milk powder

Since milk contains a certain amount of water, it can easily make the taste light when added directly to the coffee liquor. It neither highlights the mellow nature of the coffee nor the smoothness of the milk can be drunk. Therefore, some friends thought of replacing the milk with a milk powder that contains no moisture. Because the milk powder itself is made by concentrating and drying milk, when it is dissolved with coffee liquor, we will get a cup of milk coffee with less moisture, a rich taste and a mellow taste.

First put milk powder about twice the coffee powder into the cup, open the hanging ear, and inject hot water above 90 ° C into the 8-minute filling of the filter bag. After waiting for the coffee liquid to flow out, continue to inject water for the second time, and repeat the same operation, three times in total. Finally, melt all the milk powder into the coffee liquor and finish it. The milk coffee thus made has a very obvious aroma, excellent smoothness, and no blemish taste at all.
