Coffee Culture in Melbourne Coffee shops abroad recommend cafes that can be used for reference
St.Ali
I asked a lot of coffee experts which is the best coffee shop in Melbourne, but no one gave me a standard answer. But a lot of people tell me: St.Ali is one. After all, it can use cafes as a brand and turn baristas into stars. It is sufficient to have a reason for success.
The weekend I meet with my barista friends is usually to explore the schedule of three or four stores. Soon after I returned to Melbourne, my good friend James made an appointment to go to St.Ali. For this too famous cafe, I was really late. Mark founded St.Ali in 2005 and sold Seven Seeds three years later, while buyer Salvatore Malatesta made it the flagship store of his coffee business, and he also runs some of the best cafes: Liar Liar, Sensory Lab, Plantation and St ALi North. The cafe, located south of downtown Melbourne, sells an average of 700-800 cups of coffee a day.
Before entering the door, we jokingly wondered if we would meet Matt Perger--, a man who lives on YouTube (Matt's introduction will be attached later), only to see him standing at the bar tasting some berries and discussing the menu with the chef. Two young fans were nervous and excited to come to the menu. I saw two "value meal deals" in the middle: "barista breakfast" ($10) contains a cup of espresso, a cup of cappuccino and a cup of filter;, while "St.Ali Coffee Adventure" ($20) contains six different cups of coffee, all of which are carefully selected by baristas for the best flavor of the day, which can be said to be very fresh and seasonal.
Decisively chose the seductive coffee adventure, the waitress saw our little eyes and ordered and said: "Matt is here today, you can take a picture with him later." It seems that popular baristas have surpassed entertainment stars in their influence in this city. This coffee combination includes two espresso, two "white coffee" and two hand-brewed coffees. One of the things you can't miss is the mysterious "Coffee Shot" in the glass, which is Matt's skill, and he made this hand-brewed coffee made by a coffee machine to more people in World Barista Championship in 2013. As the guests turned around frequently, we enjoyed the rich layers brought by the alternation of six cups of coffee.
The first entrance must be Coffee shot, which is the best taste Matt got after testing thousands of espresso, dozens of coffees and countless baking curves, reversing the world's perception of espresso. James told me that many baristas like to use coffee machines to pull espresso very short, of course, the result is that the taste will not go wrong but a certain percentage of coffee beans will be wasted. It can be said that powerful baristas dare to use espresso machines to play more magic.
Of course, in addition to this coffee package, you can also find a lot of new things in the St.Ali menu, which makes it difficult to associate them with coffee. "Christmas Cake" is Matt's award-winning work in the global competition in 2014, using cocktails (rum, wine and martini) and coffee to create a liquid "cake", $14 a cup also makes people want to try! Two other models, "Coffee Negroni" and "White Russian", have also added Gin and Vodka, making it hard for alcoholics to resist.
Matt is not the only star barista in St.Ali, and Ben Morrow's flower-pulling skills are excellent. Enthusiasm for coffee, precision and demanding quality make it difficult for even picky coffee drinkers to say no to St.Ali.
In addition to coffee items, it is also a good place for all kinds of parties and parties. The function service includes bands, photographers, flower decorations, cakes, etc., and gives guests 250g of St.Ali coffee beans to take home, but the coffee is promoted to the extreme. At the same time, they have opened their own pop up Cafe in Seoul, London, Italy and Jakarta.

Proud Mary
As the No. 86 tram moves slowly along the Smith Street, shops full of hippie skirts and bicycles on the eaves begin to appear, where you can easily be dragged back to retro times by mottled 19th-century architecture and artists. The neighborhood has authentic restaurants and Pub from all over the world, of course, the most famous is cafe, which can be encountered no more than 300m. Caffeine and moving creative cells make Collingwood's life never black and white.
At the intersection of Oxford and Stanley streets lies a two-story building with a red brick wall. The two big chimneys next to it make it look like an abandoned factory. There is no eye-catching sign, but watching pedestrians step into the glass door without thinking and begin to line up, we know that there should be good coffee here. Proud Mary, founded in 2009, serves 32 famous cafes in Australia.
Straight into the door is the bar and the glass window selling dessert. The Synesso Hydra in the store is the dream machine of many baristas. On the right-hand side of the dining area, there is a huge blackboard hanging on the wall with a dense handwritten menu. Proud Mary has a distinct sense of color. All the cutlery and coffee bean bags are mainly blue and white, and the design of the store is a large piece of black against the red brick wall.
Sitting at a long table, I can't help being attracted by the cold drip equipment in front of me. The waiter brings my latte. The exquisite rosetta is fascinating. In addition to espresso, there is a special hand-made coffee menu for coffee lovers, and there are often 5-6 kinds of single origin beans to choose from. Founder Nolan Hirte said: "We try to make our filter menu more interesting, offering coffee from different growing areas or different ways of making it."
This is not only a relaxing space for a good cup of coffee, but also a place where you can feel the coffee story and learn coffee knowledge. On Proud Mary's website, you can see guides to different blending methods, and you can read interesting stories about their selection and purchase of coffee beans in Africa and Brazil. Maybe for Hirte, coffee is the way life is presented.
When I was taking a picture at the marble bar in the store, the waiter pulled me and said, "you can shoot close to the machine, it will be more beautiful." You can shoot as much as you want. " The last touch of milk foam slipped down my throat and walked out of the store. Melbourne had cleared up.
I think I found a reason why people love this place.

Seven Seeds
The name "Seven Seeds" comes from the precious cargo Baba Budan smuggled from Yemen to India in the 17th century. Brother Budan managed to get past the strict censorship by hanging seven seeds of coffee beans around his waist and spreading coffee cultivation around the world. Seven Seeds selects high quality coffee beans from across America, Africa and Asia to satisfy Melbourne's discerning caffeine junkies.
After selling St. Ali in 2008, Mark Dundon opened up a new space in Carlton and with his business partner Bridget Amor converted a warehouse into a new cafe landmark in Melbourne. Close to the University of Melbourne, it's not just a spacious and comfortable cafe. Glancing down the aisle to the right, you can see roasting machines and "researchers" doing cupping, as well as selling their own coffee beans, coffee equipment, custom mugs, etc., and holding regular training courses and public tasting events.
You can enjoy a nutritious breakfast and a light lunch with seasonal updates, and the exquisite desserts placed in the glass cabinet below the order table are also commendable. Coffee is king here. Seven Seeds 'House blend is delicate and gorgeous, and you can find carefully selected coffee beans from a single origin. Mark once said in an interview that the Seven Seeds space design shows the process behind the coffee, allowing customers to see the whole process of roasting, tasting and making. This sense of transmission potentially allows people who enter the cafe to understand their efforts and the scene behind the coffee.
Seven Seeds baristas never disappoint. Bowen, the operator of CBD's most famous Patricia, used to work here. The cafe that serves Seven Seeds is also listed as a must visit in Melbourne on each list, and Hortus X Seven, a short-term cafe in Docklands, stands out. Independent buildings and Nordic design, standing bar to chat with baristas, casual atmosphere makes nearby business people become regular guests.

Patricia
Patricia is the first coffee shop I have known since I came to Melbourne. It is also a cafe that I recommend the most. If you can only go to one coffee shop in Melbourne CBD, it must be Patricia. It is also the first stand only cafe in Melbourne.
If you rely on the map, it is really hard to find. I walked past the courthouse and a row of small buildings along Williams Street. On my first visit, I walked around the circular business square twice but couldn't find the shop tag. If you pass by in the morning or during your lunch break, just follow a long line to find this black-walled cafe with no seats. Of course, there are coffee addicts who are standing at the door chatting or sitting on the carton enjoying coffee.
It seems to be at odds with the office buildings around it, and Patricia directs coffee and the way we drink it toward the new and the old-seemingly opposite directions. It is designed to resemble an old European coffee bar, but on the other hand it incorporates ideas that have only recently become popular in Melbourne cafes, pushing the coffee standard of Melbourne CBD to a higher level. Patricia is not a space you want to stay in for long, stopping to read the newspaper or enjoy brunch. And if you just want a good cup of coffee, this is definitely the place to look.
Interior design, smooth lines, white walls, window sills dotted with flowers and books, decorated with the roof has written the name of the lights. It's as clean and pure as the black coffee here. The small space was crowded with men in suits standing in the corner with coffee cups. The coffee here is more about quality than showmanship. Coffee beans come from different roasters: seven seeds; market lane; and small batch. Probably the most pleasant surprise here is Cold filter, which is packed in a small wine pot and poured on a large ice cube in a white ceramic cup. The taste is thicker but softer than cold drip.
Simple coffee is accompanied by modest but elaborate desserts, such as small peanut butter cookies or a slice of ginger bread. Probably best known for Doughboys Doughnuts 'variety of Doughnuts and the French dessert Canele by Gracious & Delicious, there's also a must-try coffee item: Cloud mountain. Consisting of coffee, ice cream and Canele cake, it is definitely a double paradise for coffee and dessert.
The team here has a tacit understanding and is happy to share their love of coffee. Even in the busiest hours, this comfortable atmosphere will not go away. There is no grandstanding menu, no flamboyant presentation, Patricia is just a sign of good coffee.
