The 11th Kaohsiung International Food Exhibition will be held at the Kaohsiung Exhibition Hall from October 26 to 29, and the "World Cup siphon Coffee Competition" will be held at the exhibition venue on the 28th. The competition will be held by Taiwan representative Yang Yishan against coffee experts from Japan, South Korea, Macao, Malaysia, China and Hong Kong. Contestants are required to make 3 designated mixed coffees and 3 creative coffees within 15 minutes. The process must accurately control the cooking time, temperature and firepower to increase the difficulty of the competition.
Yang Yishan is from Taipei, and the university is a business student. when she worked as an administrative worker in a coffee brand in Taipei 17 years ago, she used to be a blank sheet of paper to brew coffee. Because of her work, she came into contact with siphon coffee, so she read and taught herself, or asked people at the company to go home and study by themselves. the more they learn, the more interested they become, and the more they become more and more sophisticated in making coffee.
Yang Yishan said in a telephone interview with the Central News Agency that she has been participating in the competition since 2011, and won the second place in the World Cup siphon Coffee Competition in 2015. She did not participate in the competition last year but went to South Korea to watch the match. This year's competition was held in Taiwan, and she made a comeback to take part in the competition. Her home-court advantage has boosted her confidence and should be able to give her more points.
She points out that, like the wine blending competition, every aspect of the brewing process of the competition is scored, including service, technical perception, brewing flavor, and other details, which have to be taken into account. At present, she feels that every link should be well strengthened. She went all out to participate in the competition to win honor for her country.
Yang Yishan added that she prepared for the domestic trials in April this year, and won the first place in the domestic competition in Taichung in July. For months, she almost took the company as her home. She usually stayed at the company for four hours a day after work, and practiced for eight or nine hours on holidays. Now the same is true. Her family is very supportive, and the company is willing to let her use the company equipment and coffee beans to practice.
She added that she has tried a lot of coffee beans, each with different characteristics and flavor, as to which one to take part in the competition, although it has been decided, but it is not convenient to make public.
