Shimotai did not study this, he continued to open his own point, cooking for the guests, but he wrote down the idea.
Finally, when the old man retired, he awakened the taste that had been hidden in his heart for a long time and began to systematically study the garlic drink that tasted like coffee, trying to develop a formula. It took him about five years to develop a drink formula that satisfied him through constant trial and error and failure. In addition, he applied for a patent in 2015 and opened his own studio in Iwate prefecture.
