Italian start-up Live Better has launched a new drink, concentrated cocoa Chokkino, hoping to solve the problem of caffeine intake discomfort.

To understand the uniqueness and market foresight of Chokkino, FoodNavigator interviewed founder Elena Luzi.

Elena says she has never had coffee in her life and would like a substitute that provides the same utility and added value. From this idea, an extension appears in Chokkino, which is a concentrated version of cocoa. Cocoa beans are rich in antioxidants, minerals, prebiotic fibers and amino acids, she explained, and ground cocoa powder contains more than 400 bioactive molecules that affect the central nervous system in a milder form, producing the same effects as coffee. There are many kinds of cocoa on the market, but manufacturers add sugar and milk to make it more delicious, reducing the original efficacy of cocoa and causing a burden on the human body. Chokkino is unique in that it is 100% cocoa powder and water, brewed through a special machine, without adding anything extra. Each 40 ml serving of Chokkino has only 21 calories, but it contains more antioxidants and trace elements (such as copper, iron and magnesium) than red wine, green tea and wolfberry. The fiber content accounts for 30% of the total weight, and the protein content accounts for 20% of the total weight of the drink.

Most espresso machines filter coffee powder under high pressure, but Chokkino must use a special machine to brew. The goal is to completely dissolve cocoa powder in a small amount of hot water, in such a way that it can drink the fiber and protein it contains. In just three months, it has sold to 200 Italian cafes for operational use and is now entering the UK market.

Concentrated cocoa Chokkino is mellow and slightly bitter, similar to coffee. Elena hopes that Chokkino, as Live Better's first product, will help transform the food and beverage industry so that the future of food can be both delicious and healthy.
