Variety diversity

From the original tea trees in Taiwan, which were recorded 300 years ago, to nearly 200 years ago, tea species and technology were introduced and planted by our ancestors from Fujian, China. Through continuous introduction, development and improvement, the tea trees planted in Taiwan today can be said to be various and rich. It can be called the treasure house of global tea trees. In addition, Taiwan is located at 10 degrees above and below the Tropic of Cancer. It belongs to subtropical climate, with four distinct seasons and pleasant climate. It is suitable for the growth of tea trees and has become a world-famous tea producing area.

There are many kinds of tea in Taiwan, from green tea, oolong tea to black tea, each kind of tea has its own characteristics and flavor. At present, most of the tea is divided into non-fermented green tea, fully fermented black tea and partially fermented green tea in the middle, that is, oolong tea.

Among them, oolong tea accounts for the largest, and oolong tea, Gaoshan tea or Tieguanyin, which are often heard, are actually classified as oolong tea; oolong tea is classified according to the degree of fermentation, among which Gaoshan tea and packaged tea belong to light fermented tea, which can also be called "fragrant tea"; Dongding Oolong Tea is moderately fermented and can also be called "Luzhou-scented tea"; while Oriental Beauty and Tieguanyin, which are highly fermented, are heavily fermented.

Bag tea is a kind of light fermented tea with elegant aroma and a fragrance of sweet-scented osmanthus. The old Wenshan area is today's Pinglin and Nangang and Mucha in Taipei, plus Hsindian, Shenkeng, and Shiting. These areas are also the main producing areas for tea, so they are called "Wenshan bao tea." there has long been a saying in Taiwan's tea industry that "planting in the north is covered in the north and frozen in the south," and the north refers to Pinglin.

Yuping Lin Wenshan packaged tea belongs to semi-leavened tea, the tea is in strips, you can smell the elegant fragrance after brewing, the color of the tea is bright and not turbid, and the taste of tea is sweet and moist, so it is widely loved by the public.

Gaoshan tea-fragrant and sweet

Alpine tea refers to tea grown above 1000 meters above sea level, with Alishan, Lishan, Yushan and Shanlin Creek as the four major producing areas of alpine tea. Because the alpine climate is cold, the morning and evening clouds are shrouded, the average sunshine is short, the bitter ingredients such as catechins are reduced, and the buds and leaves are soft, the mesophyll is thick, and the pectin content is high, so it has the characteristics of emerald green color, mellow taste, elegant aroma and brewing resistance. Gaoshan tea has quickly become the darling of the tea market in recent years.

Zuo / Yushan Alpine Oolong Tea: the tea is clear in color, tastes gentle and sweet, has a strong aroma and is unique. Right / Alishan alpine tea: due to the short average sunshine and low temperature of Alishan, the tea buds are less bitter and astringent, which virtually increases the sweetness of tea.

Frozen top oolong tea-long aftertaste

"Frozen Ding" is a place name located in today's Frozen Ding Lane in Lugu Township, and it is also a frozen top mountain by Qilin Tan. It is said that because the ancestors were generally poor in their early days and had few shoes to wear, they had to "go to the top of the mountain with their toes frozen" in the cold winter. The oolong tea made from the frozen top has a mellow taste, an obvious roasting aroma, and a strong throat rhyme, giving Dongding Oolong Tea the reputation of being "the saint of Taiwan tea" and becoming synonymous with fine oolong tea.

It is located in the foothills of the Frozen Peak at an altitude of 600 ∼ 1200 meters. It has a unique fragrant and mellow flavor because of its cool climate, sufficient rainfall, fertile soil and mild sunshine.

PLUS Port Tea

Shunxing Port Tea Garden is located on the hillside of Gangkou Village, Manzhou Township, Hengchun Peninsula, close to the sea, less fog and less rain, strong sunshine and falling mountain wind, so that the port tea has a special "seafood". Port tea should be classified as oolong tea according to the degree of fermentation, but the tea is gray-green, which is different from oolong tea. In particular, apart from the fact that the tea garden depends on overseas, it is also the only native tea plant in Taiwan that has not been inserted by the pathian and has not been improved, and it is also listed as one of the three treasures of Hengchun.

Port tea

Tieguanyin-carbon fragrance is mellow

Tieguanyin, the name of tea variety, originated in Anxi, Fujian Province. it was introduced by Zhang Naimiao Tea Master in the reign of Guang Xu in the Qing Dynasty. now Mucha and Shimen still follow the traditional ancient method of re-baking and re-fermentation. Muzha is different from the varieties of tea trees in Shimen. Muzha is made of soft branch Tieguanyin, also known as "red heart and crooked tail peach", and the tea made in Shimen is also called Zhengcong Tieguanyin. The tea made in Shimen is full-bodied and has ripe fruit aroma, and the steady taste of tea soup is the characteristic of Tieguanyin.

Tieguanyin is heavily fermented and baked with charcoal fire, so the tea is dark golden brown with a mellow taste and a unique aroma of charcoal fire. There are also 8 ∼ 18-year-old tea, after time quenching, no bitter taste, the aftertaste scattered with a touch of sweet and long.
