Coffee shop: what do your friends usually call you?

Mystery person: sister po, po po, because my Wechat name is po, which was before I had Poshang Coffee, and then happened to open the shop in this place called Caojiapo.

Coffee shop: why did you give up the media industry and open a cafe instead? Have you systematically learned the knowledge of making coffee?

Sister po: when I was still in the media a few years ago, I signed up for a barista training class. Because I like coffee, I have visited many shops. In the media industry for more than a decade, after the changes and reform of the industry, there have been different working environments and mood, unlike this, coffee and different cafes have accompanied me and given me a lot of comfort. Speaking of a little hypocritical, I am a very perceptual and subtle person.

From media to coffee, it is a process of constantly enriching yourself.

There are also a lot of such people around me, originally running around in a variety of industries and finally aimed at making a delicious cup of coffee. There are always some reasons why people love coffee, and some people are happy to share it, and some people just understate it. I think any beginning is the seed of emotion sprouting quietly.

Part II: coffee on the slope

Coffee shop: could you tell us a little bit about your coffee shop? What's his name? Where is it? When did it start?

Sister po: coffee on the slope, on a road called Caojiapo in Yuhua District of Changsha City, this is indeed a small slope, the old community facing the street, quiet, introverted, personality, began on September 11, 2021.

Coffee shop: is there any attention to the location of the coffee shop? Look at the picture you share, the shop is in a community residential building, did you consider the definition of cafe at that time? Are you deliberately trying to create a human feeling in the neighborhood?

Sister po: I think that in Changsha, coffee drinkers are still a minority. Therefore, the neighborhood crowd alone is not enough to support the survival of a shop. Our definition is a comfortable environment + good coffee. I chose here because the traffic is so convenient that you can enter the store by parking. There are subway, bus and so on.

Coffee shop: the overall decoration of the store is a warm wood color, and the design of the long bar and most elegant (lovely) coffee cups are also very similar to the traditional Japanese hand shop. Is it the embodiment of personal style or is it all the work of the designer? What's the point of this design?

Sister po: the design of Poshang Coffee is based on the blanks of this building at first. It was originally an old-fashioned one-bedroom, one-hall house, stretched vertically, and the landlord built a backyard many years ago, with a long and narrow feeling as a whole. How to make full use of this space and create a comfortable environment and atmosphere at the same time is something that designers consider.

The original store

Combined with some of my background experience, the designer made the existing three-paragraph narrative style, namely "triple door", and then connected the whole space with a 17-meter-long table, which not only has the aesthetic sense of art, but also maximizes the use of space, killing many birds with one stone. Now nearly 70 square meters of space can hold about 30 people at the same time.

Coffee on the slope

In terms of soft clothing, we don't choose a certain style too much, just based on my collection and hobbies. When everything is laid out, there is now the coffee on the slope. On the whole, this is an experience of flowing water.

When coffee becomes an emotional need, I think chain brands are not what people are after. More often, we will find a small shop, do things quietly and find peace or listen to other people's stories. Look through Sister Po's initial notes and you will see that this small shop is full of details from the beginning to the end. The whole decoration process has been "recorded", the time is almost a late summer and early autumn, no more, no less. On the other hand, Sister Po's interpretation of the design of the coffee space on Poshang and the self-projection of the store make people more sure that the existence of this store is a warm story.

Coffee shop: how much does it cost from soft installation to coffee machines and equipment to facade rental?

The soft outfit, except for the cups in my collection, didn't cost much, just some chairs bought from some treasure. Some of the other old chairs are not expensive, several hundred yuan each. Plus cabinets, lights, green plants, etc., should be about 20,000 yuan.

Sister po: the rent is 4000 yuan per month.

In terms of equipment, we did not choose hot mom, ek and other equipment according to the current mainstream. What we consider most is practicality, such as coffee machine, which is a multi-boiler competition machine; hand-brewed coffee, we like clean and sweet taste, as well as clearer flavor expression of origin, so we chose compakR120, a large-caliber knife plate grinder.

Coffee shop: how much do you think it would cost to open a local cafe?

Sister po: the cost of opening a store naturally varies greatly according to different positioning. Do it according to your own budget. The first goal of Poshang Coffee is ten years. To this end, we will work hard, the kind of efforts that have logic and methods.

Coffee shop: how is the business status of the store at present? Did you get your money back? How many cups of coffee can you produce when you are busiest?

Sister po: at present, the operation is in a state of healthy operation. When I am busiest, I produce about 80 cups a day.

Coffee shop: seeing your chatter that there are other drinks sold in the store besides coffee, have you ever thought of selling only coffee?

Sister po: coffee is also a drink. There are always guests who don't drink coffee and take care of their needs properly. Sustainable development.

Can do business! There are two extremes for many people to open a coffee shop: expensive but stylish coffee equipment and cheap but unprofessional coffee equipment. But as a coffee lover who has been in the coffee circle for a long time, Po's choice of hardware is suitable for store sexuality and professionalism.

If it is not their own facade, then the monthly rent will become a fixed expense. If the rent is low, the corresponding cost and risk will be reduced. But this is not to say that every cafe is recommended to choose this type of store location, it depends on the choice of the cafe itself, if you are walking volume and do not require the overall environment of the coffee shop, then the office area near the office building is the best choice.

Coffee shop: I saw Mr. Li baking beans. How long has Mr. Li been baking beans? Are the roasted coffee beans available only in the store at present?

Have you ever thought about turning coffee beans into an industry and turning them into their own coffee bean brands?

Sister po: always Li is my trusted partner. He has been engaged in the coffee industry for a long time. He has been focused on coffee roasting for 8 years. He is a senior roaster at SCA. At the same time, he often attends master courses such as Guo Yuru and Hu Yuanzheng. He is an experienced roaster. At present, Boss Li is preparing his own baking brand. Coffee and cooked beans are also supplied to many cities. Now he is more interested in looking for more niche boutique coffee varieties from excellent producing areas.

Coffee shop: are there many kinds of beans in the store? Can Italian style be used as SOE? Do you have your own criteria for choosing coffee beans?

Sister po: we actually have nearly 50 varieties in our raw bean bank, all of which are coffee beans from boutique farms all over the world. Considering the editing of the menu and the selection cost of the guests, we basically rotate every 15-30 days.

According to the standard of bean selection, we prefer the traditional washing and solarization, but considering the acceptability of the guests, we will also use some special treatment methods, such as honey treatment, anaerobic solarization and so on.

The choice of Italian matching, we also have more ideas and concepts, our SOE beans also have more choices, beans are not limited to the popular Ethiopian producing areas.

More often, we will regularly provide guests with some boutique matching, try to achieve 1: 1 > 2 flavor combination.

Italian hand flushing can also be satisfied.

Coffee workshop: now many young people want to start their own coffee, a small cafe, not to make money is just an attitude towards life, what do you think of this? What do you think of those warm-blooded young people who love coffee in order to spread the correct values of coffee?

Sister po: 1. Opening a shop is not for making money, but for attitude-- just be happy. Any experience, as long as they have no regrets.
