What is the difference between a trapezoidal filter cup and a tapered filter cup? Why do few people use trapezoidal filter cups to make coffee by hand?
I wonder if any friends have found that the filter cups we use in daily coffee brewing, whether they are V60, kono or origami, are almost all cone-shaped in appearance. This makes people mention the filter cup, the first impression that comes to mind is the cone-shaped appearance. But in fact, the filter cup has other shapes, such as the "trapezoidal filter cup" to be shared next in the front street.
The first ladder filter cup in 1936, Melitta Bentz Company, founded by Ms. Merita, the inventor of hand coffee, launched the world's first ladder filter cup! It also has a unique alias-"fan-shaped filter cup".
As the picture shows, it is not much different from the classic trapezoidal filter cup in appearance, showing a reverse trapezoidal shape! The only difference is that the trapezoidal filter cup launched by Melitta Bentz has only a small hole at the bottom.
Modern trapezoidal filter cups have three holes. Although it was the era of being dominated by Italian coffee, the emergence of this filter cup caused a lot of heated discussion. The time of the classic trapezoidal filter cup came to 1959, hand-brewed coffee has become popular in Japan, and the unique trapezoidal filter cup is naturally sought after by the same heat. As a result, Kalita, a well-known Japanese manufacturer of crane-mouth pots, "borrowed" this filter cup and improved the original single-hole design into three holes. These three holes are publicized by kalita as a feature of the filter cup.
The reason why kalita will turn a single hole into a three hole is very simple, as it says: drop delicious food before the miscellaneous smell appears! Because the hole of the fan-shaped single-hole filter cup launched by Malitta company before is too narrow, and the water seepage rate is very slow, with the Japanese-style deep-baked beans which was the mainstream at that time, it is easy to lengthen the extraction time because of blockage, and then over-extraction, adding to the bitterness. So kalita improved it from one hole to three holes, and the acceleration of water seepage greatly reduced the risk of over-extraction.
Why is a trapezoidal filter cup called a fan filter cup? As mentioned earlier, the trapezoidal filter cup is also called a fan-shaped filter cup, and the reason for the emergence of the fan-shaped filter cup comes from the filter paper it uses. Because the filter paper looks very similar to the fan, so people give this filter cup the name of "fan"!
Traditional tapered filter paper has only one fold mark, while fan-shaped filter paper has one on the side and one at the bottom! Next, let's share how it is cooked in Qianjie. In front of the brewing experiment, the street will use the Kalita ladder filter cup to brew twice, once with the light-roasted Ethiopian Santavini, and once with the deep-baked Indonesian gold Mantenin, to see what the characteristics of the coffee made with it will be! Grinding degree: Santa Ek43 9.5 scale (20 screen 85% pass rate) Golden Manning Ek43 11 scale (20 screen 70% pass rate) use gram weight: 15g powder water ratio: 1:15 (225ml hot water) boiling water temperature: Santa Veni 92 °C, Gold Manning 88 °C cooking method: three stages so first, let's fold the filter paper first! Because the trapezoidal filter cup has two folding marks, it means that we need to fold it twice! First of all, let's fold any one, then turn one side and fold another fold mark! Just hold it open.
Then we wet the filter paper to make it fit better with the filter cup.
Pour in the coffee powder and start cooking!
First pour twice the amount of powder (30ml) and steam for 30 seconds, then slowly circle (not the usual circle, but oval! ) inject 120ml hot water, wait until the bottom of the water level, then slowly circle around to inject the remaining 75ml hot water, and wait for the percolation to be completed!
The cooking time of Santa Vini is 2 minutes and 16 seconds. The flavor is soft pineapple acid, guava sweetness, thick taste, and the overall feeling is more balanced! The cooking time of Golden Manning is 1 minute and 58 seconds, and the flavor is spices, nut cream, rich black and skillful, very mellow, and gives people a balanced feeling as a whole. It can be seen that the coffee brewed from the trapezoidal filter cup is more balanced. The emergence of V60 filter cup is the reason why it is seldom used.
In 2000, the concept of boutique coffee made people gradually move from the traditional deep-roasted coffee to the shallow-roasted coffee, which paid attention to the expression of flavor. V60 was born in such an era! Compared with other balanced filter cups, it pays more attention to highlight a certain point, so it will be more suitable for the flavor expression of shallow roasted coffee. Then, in the context of boutique coffee, people's favor for it is increasing day by day, coupled with the overwhelming marketing of capital to it, Oh Huo, direct Wang Fang! Users of trapezoidal filter cups are turning to V60 or other tapered filter cups. Therefore, although other shaped filter cups, including trapezoidal filter cups, can give a good taste of coffee, they are relatively rare compared to V60 or other tapered filter cups!
