Do you need to plan different cooking frames for different filter cups?
Yesterday, a friend who came to the store asked such a question: "do different filter cups need to use different cooking parameters or methods?"
After some inquiry, I learned that because Qianjie is often recommended in the article, the brewing time of hand-made coffee should be controlled at about two minutes! Although this friend used the parameters recommended by Qianjie to cook, the extraction time went up to 2 minutes and 20 seconds! After layers of investigation, it is found that the problem lies in the filter cup used. The cooking in the front street article uses V60, but it uses a cake filter cup, so there is such a question at the beginning!
First of all, we need to know that the difference between the filter cup and the filter cup is not only in the appearance level, the shape of the filter cup, the size of the hole, the distribution of the diversion bone will have a certain impact on the extraction! If we follow the shape characteristics of the filter cup, then the mainstream shapes on the market are divided into three types: trapezoid / fan, cone, flat bottom / cake.
However, no matter the distribution of shape, hole and diversion bone, their main function is to affect the launching speed, and this is also the key point of constructing cooking parameters! For example, some filter cups that want to create a rich flavor, their launching speed is often faster! For example: V60 filter cup, Sichuan flow filter cup, B75 filter cup, Origami filter cup, ice pupil filter cup and so on. Or some filter cups that want to make the extracted coffee taste more balanced and mellow, their launching speed will be slightly slower. For example: Kono filter cup, infinite filter cup, flat bottom filter cup, cake filter cup and so on.
In front of the street, the launching speed of the filter cup was specially tested, and the specific order is as follows: B75 > Chuanliu ≥ star awn > ice pupil > V60 ≥ Origami > flat bottom cake (3 holes) > Kono > Kalita sector (3 holes) > infinite filter cup > Mellita sector (single hole). Back to the question itself, do we need to change the cooking parameters / methods according to the filter cup? Then we might as well do a cooking experiment, choose V60 with faster launching speed, and compare it with cake filter cup with slower launching speed, to see whether the parameters and methods of V60 can be applied to cake filter cup!

The cooking time of V60 is 2 minutes 01 seconds, and the cake filter cup is 2 minutes 18 seconds! In terms of flavor, the Hartmann rose summer rushed out of the V60 has a full sense of juice, rising pineapple juice and the aftertaste of Earl black tea! The Hartmann rose summer flushed out of the cake filter cup has the obvious sweetness of blueberry, soft acidity, the aftertaste of Earl black tea, and it also has a more mellow feeling. Then, we know that the faster flow rate of V60 cooking parameters / methods can also be applied to slow flow cake filter cups! As Qianjie often said, "the best cooking time is controlled at 2 minutes" is based on 15g powder, three-stage water injection, and the filter cup uses V60, if the parameters are applied to the filter cup with a slower flow rate, then the extraction time will naturally be relatively prolonged.

Of course, we can also adjust the parameters to make the slow flow rate of the filter cup extraction time to about two minutes, but this will lead to some defects in the performance of the flavor, such as thin taste, light taste and so on!
So we know that we are not adjusting the parameters for the sake of the parameters (extraction time). The reason for adjusting the parameters is that there is a negative situation in the performance of the coffee taste, which needs to be corrected by adjusting the parameters! Therefore, we do not need to struggle too much about the question of time! As long as the coffee tastes good, isn't that enough?
