Today, with the barbaric growth of the coffee industry, boutique coffee shops are springing up everywhere, and there are more and more small coffee roasters. One of the benefits of the booming boutique coffee industry is that we can easily buy freshly roasted coffee beans, but we are sometimes advised by baristas to keep and drink beans that are too fresh.

Why do we have to "keep" fresh coffee beans? Can't you drink if you don't "raise"? How to judge whether the beans are fresh or not? let Qianjie tell us a little bit about coffee "growing beans" today.

Why should coffee beans that are too fresh (freshly roasted) be "kept" for a few days?

This is because freshly roasted coffee beans are filled with a lot of carbon dioxide, with the smell of popcorn produced by Maillard reaction, and even a touch of smoke. If you grind and brew immediately, the carbon dioxide will act as a barrier, hindering the extraction of coffee flavor substances by water, and may also bring the taste of roasting to the coffee, causing the coffee to show a poor flavor.

The aroma of freshly roasted coffee can last for two to three weeks, especially at 8-25 days, and the flavor characteristics are the strongest, that is, the so-called "best taste period". The purpose of growing beans is to allow coffee beans to slowly discharge carbon dioxide, taking away the unpleasant smell produced by roasting. At the same time, the flavor of the beans will be released slowly, and we can extract the aroma of coffee more easily.

With the deeper the roasting, the larger the size of the coffee beans, the looser the internal structure, the more carbon dioxide the body contains, and the more gases need to be removed. In other words, the deeper the baking degree, the longer the bean cultivation period. For example, Italian coffee beans take about 7 to 10 days to show a better flavor, while medium-and shallow-roasted coffee beans, such as medium-and shallow-roasted coffee beans, take about 4 to 7 days.

Can't you drink beans if you don't "raise" them?

Qianjie's advice is to enjoy the coffee beans as soon as you receive them.

Now most coffee merchants and consumers have become more aware of the importance of fresh coffee beans, and coffee beans shipped to consumers are roasted within a week. In the former street coffee, for example, the roasting production plan of Qianjie coffee beans was made according to the dosage within five days. In the worst case, the beans received were roasted for at most five days, plus a logistics time of 1 to 2 days. The flavor of beans has tended to be stable, so beans can be cultivated or not.

Of course, if you receive the beans we baked yesterday, Qianjie suggests that you can start immediately! Although, a packet of coffee beans may be roasted for several days before the flavor tends to stabilize. But when the beans are freshly baked, they can not only taste the smell changes of fresh coffee beans every day, but also get the judgment of whether the coffee beans are "well nourished". You can also experience another elegant demeanor of boutique coffee beans and feel the different charm of coffee!

Before tasting, how can we simply judge the state of "raising" beans?

At this time, we can observe the state of steaming bulging bags and simply judge whether the beans are "enough". The purpose of steaming is to drain the carbon dioxide from the coffee powder and soak the coffee powder to "warm up" it. When steaming the same bean, when the coffee powder shows a "hamburger"-shaped drum bag more easily, it means that there is more carbon dioxide in the powder and the beans are relatively fresh; if the powder bed does not change much and does not bulge when steaming, that means the beans may not be very fresh.

It should be noted that not all beans show obvious "hamburgers". Some beans with shallow baked or hard beans are not that big, and steaming appears like a pressed hamburger, which seems to have swollen. But that doesn't mean the beans are not fresh.

Of course, observing the exhaust of the steaming drum is only a rough way to judge, whether the freshness of the beans, or not need to be combined with the actual taste of the specific flavor to know.
