Those who are familiar with Qianjie should know that in addition to the drinks on the blackboard, Qianjie stores actually have many hidden menus, such as Australian White, Italian Condenser, Dirty and so on. The temperature change in Guangzhou, like an electrocardiogram, made a regular customer in Qianjie hesitate for a long time before placing an order, and finally asked his soul: "I don't want to drink ice, but also want to drink Dirty, why can't I make it hot?"

Perhaps in everyone's impression, the popularity of Dirty originated in 18 or 19 and belonged to the Internet celebrity under the trend of "dirty culture" at that time, so it was misunderstood that Dirty was the characteristic coffee born at that time.
But in fact, Dirty was created by Mr. Yoshiyuki Tanaka in Japan. In 2009, he opened a cafe "Bear Pond Espresso" in Kitazawa, Tokyo. Dirty was a specialty product he had made when he opened the business, and the menu was named "B.P Dirty".
The core of this Dirty is that Seiyuki Tanaka uses a special espresso-"Angle Stain" (angel stain). He used deep-roasted coffee beans, extracted with a large amount of powder for a short time, ultra-high concentration and low extraction rate of Italian coffee liquid, and specially used a bottomless handle to judge the extraction condition by naked eye observation (the color extracted by the concentrated solution will change from dark to light), and finally directly remove the coffee cup when appropriate. The non-stop extraction of coffee liquid column will leave traces similar to tears on the cup wall, so it is named "Angle Stain".
Using this extracted concentrate with iced milk to make DIrty, not only the delamination effect is lasting and obvious, but also the taste is from bitter to sweet and from hot to ice. So Dirty has been an ice practice since its invention, and it has changed from "Internet celebrity" drinks to evergreens on the cafe menu because of its very different tasting experience from other espresso.
Try to make Dirty hot?
It should be known that the main reason for Dirty delamination is that there is a density difference between ice milk and hot concentration, resulting in the slow sinking and fusion of the concentrate. If you want to make the Dirty hot, you need to heat the ice milk, which accounts for a large proportion, and the concentrated liquid needs to turn to ice, change the temperature of the two, maintain the density difference, and achieve the purpose of delamination of coffee and milk.
It is simple to say that it takes minutes to heat iced milk, but the production of iced espresso is troublesome. If the concentrate is thrown directly into the refrigerator to cool down, the oil and a large number of aroma substances will have dissipated by the time the cooling is over; if ice is added, the coffee will be diluted and the Dirty will become a regular latte.
As a result, Qianjie thought of the special ice hockey that often appeared on the field in recent years. The ice hockey treated by cooling can quickly cool the concentrated liquid and retain more flavor substances. Don't say much and try it right away.
Remove 150ml of milk; prepare extract concentrate; use bottomless handle; two precooled special hockey pucks; a 200ml glass. (this experiment uses warm sun to mix coffee beans, the extraction parameter is 19.8g powder 29s extraction 38g coffee liquid)
Step 1: heat the milk to about 56 °C (just a little hot)
Step 2: pour the milk into the cup and prepare to receive the concentrate
Step 3: aim the puck at the invincible handle and begin to extract the concentrate.
When the extraction is complete, enjoy it now!
The actual taste: the concentrated liquid in the rapid cooling, the warm sun blend with the Yega sour taste is highlighted, the first taste almost can not taste milk, ice coffee and hot milk level taste is obvious; the second sip of coffee and milk temperature tends to be the same, concentrated bitterness; to the third sip, the whole cup Dirty becomes a warm coffee flavor milk.
In the case of warm sun blended coffee, the hot Dirty taste is slightly inferior to the normal ice Dirty, and the production method is complex and demanding (the special ice puck has to be refrozen after one use). If you want to use hot Dirty to show the flavor of beans, you need additional debugging, and the loss seems to outweigh the gain in the case of a small cup. This is why the Dirty is cold, and there is no hot Dirty for sale in stores.
