But as the temperature drops, they gradually show a sharp sour, thick sense of fermentation, directly putting on a mask of pain. This is a situation in which the acidity is too prominent and breaks the balance. Therefore, the balance of these beans can not be given a high score! I still remember that a Kenyan AB was tested in Qianjie, and its sweet and sour quality performed well from beginning to end. There will be no negative experience of acidity, and the thickness of alcohol is very good. But it has no rhyme! Coffee in the mouth burst out the sweet and sour taste of dark berries, very smooth and full. But after swallowing, the sweet and sour taste is gone in the mouth, so it also has no way to get a high score in the balance column, because it lacks the aftertaste.

After talking about the negative examples, let's talk about the excellent representative of "balanced Coffee"-"Blue Mountain Coffee". Qianjie always emphasizes one of its characteristics when introducing Blue Mountain, that is, balance! Blue Mountain Coffee gives people a mediocre feeling, the taste is not in line with its current price. In terms of flavor, it is difficult to compare with a large number of coffee beans in Africa; in terms of taste, it is not as mellow as that of Mandarin in Indonesia; in terms of the balance of sweet, sour and bitter taste, its performance-to-price ratio is lower than that of flat South American beans. Then why can it still be so expensive?

Because it is highly balanced! Although each item can not compare with other beans, but on the whole, the performance of Blue Mountain Coffee is the most comfortable. The acidity, sweetness and bitterness are soft and balanced; the palate is mellow and very clean; the finish is long, sweet and sweet, with a lingering aftertaste.
