Ethiopia

Ethiopia is located in the northeast of Africa, bordering Eritrea with Djibouti, Somalia, Sudan, South Sudan and Kenya. The territory is dominated by mountainous plateaus, most of which belong to the Ethiopian plateau, and the central and western regions are the main body of the plateau, accounting for 2ax 3 of the country. And the East African Rift Valley runs through the whole territory, with an average elevation of nearly 3000 meters above sea level.

The average elevation in Ethiopia is 2450 meters. Due to the influence of high altitude, the annual average temperature in Ethiopia is 16 ℃, and the climate is cool all the year round. The whole year is roughly divided into dry season and rainy season, with annual rainfall of 1237 mm. The country is rich in water resources, has the reputation of "East African Water Tower", and has nearly 50 volcanoes, rich water resources and high-altitude mountain areas, is an ideal coffee growing area. However, because the domestic industry is weak and the economy is mainly agricultural industry, the planting scale of coffee is mostly small farmers such as courtyard coffee (pastoral coffee). Coffee and other crops are grown near the farmers' homes, which are taken care of on a daily basis, picked by themselves during the harvest season, and then purchased by middlemen or sent by farmers to nearby treatment stations. This model accounts for more than half of Ethiopia's total coffee production.

Yejia Xuefei producing area

Ethiopia has many famous coffee producing areas, such as Sidamo, Jima, Haller, Guji and Yirgacheffe, among which Guji and Yirgacheffe originally belonged to Sidamo, but became an independent coffee producing area because of their unique flavor.

Located on the eastern edge of the East African Rift Valley, Yegashifi is a small town northwest of Sidamo Province. It is one of the highest producing areas in Ethiopia, at an altitude of 1750-2200 meters. The humid and mild climate, abundant rainfall, fertile land and plenty of sunlight make the area very suitable for coffee cultivation. The original Yega Xuefei producing area belongs to the Sidamo producing area, but in 1972, in order to improve the quality of coffee, the government introduced the washing method, and the washed Yega Xuefei flavor is very prominent, with white flower fragrance, lemon acidity and fresh green tea taste and other unique flavors, which are similar but obviously different from Sidamo coffee beans, so Yega Xuefei has become an independent producing area. Qianjie Coffee has a washed Ethiopian Yejasuffi coffee bean, as an entry selection, with jasmine, lemon-like acidity, orange, berries and other fruit flavor, fresh and silky taste.

Cochelle producing area

The Yega Sheffield producing area also includes not only the small town of Yega Sheffield, but also the sub-producing areas such as Vina Wenago, Cochel Kochere, Godibe Gedeb and Jinrina Ambiya Gelena Abaya.

Cochel is located in a small producing area 25 kilometers southeast of Yejashafi, at an altitude of 1650-1800 meters. It is a rich area for coffee production. Thanks to the fame of the Yegashafi producing area, the processing equipment in this area is more advanced and has good equipment. So that the washed coffee produced in this area has a high level of performance, with a clean sweetness of sweetness and citrus complexity.

The coffee beans of Yega Fichel in front street are washed and roasted in a shallow way. The front street uses V60 with a ratio of 1 to 15 and a water temperature of 92 ℃. The aroma of jasmine can be smelled, and the taste is as sour and sweet as tropical fruit, lemon and citrus flavor, and the overall taste is smooth.
