As the harvest season happens to be the dry season in Costa Rica, coupled with the favorable conditions such as altitude temperature, rich production experience of coffee farmers and abundant funds, the coffee here has outstanding achievements in terms of quality and output.

As a typical local family-owned business, Tangmeo Manor was founded in 1994 and managed by the Bonilla Family family for 30 years. They are not only committed to the production, harvest, processing and export of high-quality raw coffee beans, but also continue to innovate and improve their management by adhering to the environment-friendly planting model over the years.

Founder H é ctor Bonilla Cruz was the head of the Llano Bonito cooperative from 1992 to 1998. During this period, he also introduced the concept of fair trade to the local market and sold the cooperative's coffee beans directly to Europe, North America and other countries.

Around 2005, as demand for coffee on the estate increased and global prices soared, Bonilla began to set up an exclusive processing plant and added more drying beds and drying equipment to handle fresh coffee fruit for its plots.

In 2011, the landowners bought the cedar plot (El Cedral) at an altitude of 1850 meters, and since then, they have been ploughing boutique coffee in this exquisite clearing. High altitude allows the farm to always receive the first ray of sunlight in the early morning. For coffee trees, plenty of light can provide better photosynthesis, and the mineral-rich volcanic soil also provides sufficient nutrients for the plants. and let the coffee form a fuller flavor.

In terms of planting, the boutique management of the Bernier family is also rare. Since its inception, Tonmeo has opened up 14 separate plots in three regions, including five plantations in Llano Bonito (Leon Cortes Castro) in San Jose province, eight plots in San Marcos and the remaining one near Chiribo Peak. Due to the subtle changes brought about by the land, each piece of land in the estate has its own characteristics, and since 2008, it has been coming to the fore in the coe tournament in Costa Rica.

As the winner of the 2009 Costa Rica Excellence Cup, Bella Vista Farm has been planted for 15 years. Just by its name, we can easily guess that the beautiful land should be inseparable from the beautiful scenery here. It is located in the highest elevation of the manor, the coffee produced not only has obvious fruit sweetness, especially the honey-treated batches show complex and diverse tonality in aroma, which is impressive.

At present, the manor mainly includes Caturra, Catuai, Bourbon, Geisha, Villa Sarchi and other varieties, as well as various processing methods such as water washing, honey treatment, anaerobic processing and solarization. In order to make the coffee trees in the garden have good nutritional status, they make a comprehensive analysis of plant leaves and planting soil every year in order to create a healthy ecosystem and ensure the stable quality of coffee beans.

Over the years, Tangmeo Manor has successively participated in various international top coffee competitions and won several top prizes. For the raw bean competition of Costa Rica COE Cup alone, they have won more than 30 award-winning estates since 2008. With their high-quality honey treatment of rose, they won the championship twice in 2009 and 2020, and won 12th, 27th and 22nd places in 2018, 2019 and 2022 respectively. It can be said to be the leader of Costa Rican boutique coffee.

In order to taste the delicacy, Qianjie also acquired two varieties of Tangmeo Manor during the harvest season, namely, Rose Summer from the Cedar plot and Kaduai from the Beautiful Land. The fresh fruits are all processed with honey that the Bernier family is good at.

For honey-treated coffee, the manor will first send the harvested all-red fruit to the treatment station for peeling, and the degree of pectin retention will be determined according to the corresponding honey color. Black honey hardly removes pectin, so it takes the longest time to dry, while red honey retains 50% of the thickness, and it takes at least 12 days for shell beans to be completely dried. And then. Sticky shelled beans need to be placed in a greenhouse for two days. In this process, the coffee beans need to be turned constantly to ensure that the coffee beans can be evenly dried. As the pectin is gradually dehydrated, the color of the parchment paper layer becomes darker and redder, and the sugar inside will be more concentrated on the seeds, bringing it more fruity aromas.

Combined with past baking experience, Qianjie also fine-tuned the two types of coffee to a medium-shallow degree, and tested the whole cup at the first time.

For the rose summer treated with red honey on the cedar plot, the front street smells obvious dark berries from the dry fragrance, accompanied by elegant aromas of tea flowers, black brine, raisins and jam-like fermentation. Coffee entrance is cranberry, cherry, citrus flavor, to the medium and low temperature area, the acidity of berries and orange sweet intertwined, the whole taste soft and full, after swallowing but also a burst of black tea flavor, very special.

The aroma of Kaduai treated with black honey in another beautiful plot shows more preserved fruit tone, smelling like prunes, raisins and preserved plums, and the imported coffee has the sour and sweet flavors of black brine, berries, grapes and Sydney tea. most of the fruits are dark and sour, with a round and solid taste.
