How to use hanging ears to make hand-brewed iced coffee? As we all know, ice hand punch is a production method derived from the production framework of hot hand punch. The common practice is to add ice cubes to the hot hand-brewed coffee to quickly get a cup of iced hand-brewed coffee. But because the melting of ice cubes will dilute the concentration of coffee, we will adjust relevant parameters to offset the impact of melting ice cubes on the concentration of coffee.

The traditional production methods of hanging ear coffee and hand-brewed coffee are similar, so we can also apply the ice hand-brewed model to the production of ice hanging ear coffee. Reducing the amount of water and adjusting the grinding are the adjustments made by Qianjie when making ice by hand. Reducing the amount of water is to increase the concentration of coffee to offset the impact of melting ice on the concentration; while refining the grinding is to correct the decrease in extraction efficiency caused by reducing the amount of water, so that the coffee can have a high concentration while still having a sufficient extraction rate.

We can reduce the amount of water used to brew the ear, but because the ear coffee uses pre-ground coffee powder, we cannot adjust the grinding degree of the coffee powder. To this end, the object we adjust when brewing needs to be changed to: water temperature. Increasing the water temperature can increase the dissolution rate of hot water. The higher the water temperature, the faster the flavor substances in the coffee dissolve. So next, we will let Qianjie demonstrate how to use hanging ears to make hand-brewed iced coffee. The amount of powder in a single package of hanging ears on Qianjie is 10g, and the extraction parameters are as follows: water temperature is 93°C (90°C for deep-baked beans), and the ratio of powder to water to ice is 1:10:6. This translates to 10g of coffee powder. Use 100ml of hot water and 60g of ice. But because the ice won't melt all quickly, as long as you don't drink coffee for that long, it's actually okay to have more ice cubes ~ The method of making it is as follows: Step 1: We prepare a tall cup (A short cup with a relatively large capacity is also okay), put the ice cubes into the cup first. Step 2: Hang the ear bag on the cup. Step 3: Start boiling after the water temperature reaches. First, steam it under steam, and use 20ml of hot water to steam it for 25 to 30 seconds. Step 4: When the time is up, inject the remaining 80ml of hot water into four portions. Each portion of 20ml is injected in the form of a small water stream and a circle. Remember to wait until the last injection of hot water has finished before injecting the next hot water. Step 5: As the last injected hot water completely penetrates, we can remove the ear bag and end the extraction. Step 6: Use any tool to stir the coffee to ensure that the concentration and temperature of the coffee are uniform. After mixing, you can start drinking ~

How to make cold extract coffee with hanging ears? Cold-extracted coffee is relatively much simpler because its production does not have many parameters to pay attention to, nor does it require us to deliberately control the water flow. It is very simple to operate. However, we need to prepare an additional sealed bottle for it, and the amount of powder used will be more. In terms of parameters, we can adjust them based on whether we need to add ice when drinking them. If you plan to add ice cubes when drinking cold extract to maintain its low temperature, then we can choose a ratio of 1:10 powder to water when making it. The reason is the same as ice rush and I won't go into it here; then if we don't plan to add ice cubes when drinking cold extract, we can use a ratio of 1:12 powder to water.

Then, because the amount of powder in a single bag of hanging ears on Qianjie is 10g, if a powder-to-water ratio of 1:10 is used to make it, the final cold extracted coffee liquor will be about 80ml. For most people, this is not the amount that can satisfy their appetite. Therefore, we'd better use 3 to 5 packs of hanging ears to make cold extract coffee in one go. Otherwise, it's still a bit uncost-effective to only make half a cup of coffee during such a long waiting time. Anyway, everyone decides according to their own needs. Then here, four bags of hanging ears are used to demonstrate on the front street. Step 1: First, we take out the hanging ear, tear off the seal, and then pour the coffee powder into the sealed bottle. Be sure to keep the hanging ear bag. Step 2: Inject appropriate amount of room temperature water. Because Qianjie uses 4 packs of hanging ears with 40g of coffee powder, according to the ratio of 1:10, 400ml should be injected here. Step 3: Use any tool to stir the coffee powder and water until all the coffee powder is ground in the water. Step 4: Tighten the bottle cap to seal, then throw the entire bottle into the refrigerator and refrigerate for 8 to 12 hours. (The stronger it gets) Step 5: Take out the coffee when the time is up, and then support the ear bag you left yesterday on a cup. Step 6: Pour the coffee into the ear bag and filter out the coffee grounds. At this point, the cold extract coffee is finished.

When the coffee liquor is filtered out, we can add ice cubes and enjoy the delicious cold extract coffee! It should be noted that those cold extracts that have been filtered out and not intended to be drunk now need to be poured into sealed bottles and then thrown back into the refrigerator for refrigeration to prevent qualitative changes. The shelf life is about five days. As long as you drink the coffee within five days, the chance of qualitative change is very small (unless you open it very frequently)~
