What does coffee balance mean? What does balanced taste mean in hand-brewed coffee?
Taste/flavor and taste are the two most important points we will evaluate when tasting a cup of coffee. For example: this cup of coffee tastes very fresh and XX flavor is very prominent; or, this cup of coffee tastes very mellow and smooth. But do you know that in addition to these two more specific focuses, coffee also has a relatively abstract focus. What is it? It is-balance "Balance".
"This cup of coffee tastes very balanced" is the description Qian Jie uses when introducing some coffees. Perhaps for many friends, this sentence is not so easy to understand, because as Qian Jie said,"balance" it is not specific enough. If understood literally, it means that certain elements of coffee are evenly equal, without overly prominent advantages, and giving people a very dull and ordinary feeling. But in fact, balance is not the same as dullness, and it does not just refer to absolute equality. Balance more refers to the coordination between different elements in coffee. No element is too prominent or weak, and the overall situation can be achieved in a very harmonious state.
As if it sounds a bit profound, Qianjie gives an example: it's like the volume ratio between the instrument and the human voice during the performance. Not to mention the need to be evenly matched, at least the sound of musical instruments should not be concealed by the general's human voice, otherwise it will lead to an "imbalance" situation in which only the sound of musical instruments and no human voice will occur at the scene. When the volume of the human voice and the instrument does not conceal each other and complement each other, we can call it a state of "balance/harmony." This is also true for coffee. There are many dimensions that balance can refer to in coffee, and the one that is more common in daily life refers to balance in taste. Sour, sweet and bitter are the three main flavors in coffee. When they are proportioned appropriately and no one flavor is too prominent to cover the other flavors, we can call it a balance of taste.
When one of the flavors is too prominent and causes other flavors to be concealed, then the taste of the coffee is unbalanced at this time. For example, if a cup of coffee can only feel the sharp acid, then its taste is unbalanced. Because there is not enough sweetness and bitterness to balance the sour taste, it can be so sharp. In addition to taste, coffee balance also refers to whether the overall performance of a cup of coffee is harmonious. In coffee cup testing, the taste, aftertaste and taste of coffee are all indicators to measure whether the coffee is balanced. In addition, it is also necessary to test the balance of coffee temperature from high to low based on the passage of time.
To put it simply, it depends on whether the aroma, taste, and taste of coffee will appear "shortcomings" at different temperatures. If there are, points will be deducted in the balance column of the cup test. In other words, balance is a demerit scoring item based on overall comfort. Give two simple chestnuts: the coffee has a prominent taste and a mellow taste, but has no aftertaste; the coffee has a prominent taste and a long aftertaste, but the taste is somewhat inferior. In both cases, the overall coffee is unbalanced, so they both need to be deducted from the balance column of the cup meter.
