What does origin mean? What is the difference between origami filter cups and V60? What filter paper is used for origami filter cups?
As we all know, the filter paper matching of most filters will be relatively fixed. For example, conical filter cups can only be matched with conical filter paper, and cake filter cups can only be matched with cake filter paper. If you want a conical filter cup to be used with cake filter paper, you can only change the internal structure of the filter cup through the intervention of assistive devices such as Lily Drip. Among all the filter cups, there is such a filter cup design that is well compatible with both cone and cake filter paper. It was designed by Yasuo Suzuki, one of the founders of TRUCK COFFEE BAR in Japan-"Origami".
The word Origami originates from the Japanese word for folding paper, which means origami, so it translates to "origami filter cup." To be reasonable, it is one of the few filter cups that attracts Qianjie through its appearance. Not only is the exterior design very unique, but even its color matching is also very attractive. Of course, the most outstanding thing is that it can be used with different filter papers. (Not advertising)
The same filter cup can be paired with different filter papers, which gives coffee brewing options. This was the original intention of Mr. Yasuo Suzuki in designing this filter cup, hoping that it would be as thin as paper, and that coffee brewing would have as rich possibilities as paper origami. But this also adds an annoyance to many friends when using it: "Should we use conical filter paper for this origami filter cup? Or is cake filter paper better? "
Although Qianjie's answer is a bit ambiguous, it does mean that what kind of filter paper you should use depends mainly on your coffee needs. Because the use of different filter papers will change the uniformity of extraction, causing changes in the substances dissolved in the coffee, which in turn affects the taste and texture. So today, Qianjie will come to share with you what characteristics the origami filter cup with cake filter paper and the origami filter cup with conical filter paper have, the texture of the coffee brewed with them, and what are the differences.

The origami filter cup with conical filter paper The matching of different filter papers mainly affects two aspects, one is the water discharge speed, and the other is the structure of the coffee powder layer. When the origami filter cup is used with a conical filter paper, the water flow during brewing can pass through the coffee powder layer faster, that is, the water discharge speed will be faster, because the contact between the conical filter paper and the filter cup is not so high. The protruding corners of the filter cup will support the filter paper, forming many deep grooves. This will allow the coffee powder to have more exhaust channels when brewing, which will reduce the resistance of the water flow and naturally increase the water discharge speed.
At the same time, the conical filter paper will make the powder bed where the coffee powder is piled up to have an inverted triangular structure, and the powder bed will be relatively thick. In particular, the powder bed becomes thicker as you go to the center area, and conversely, the powder bed becomes thinner as you go to the edge. Since the thickness of the powder bed varies in different areas, coffee powder in different areas will have different substance dissolution rates during brewing. Coupled with the fast flow rate, the use of conical filter paper will make the extraction of coffee relatively less uniform, and the brewed coffee will have a richer sense of hierarchy and a more prominent flavor.

Although the origami filter cup paired with the cake filter paper does not fit completely, compared with the conical filter paper, the fit between the cake filter paper and the filter cup will be higher. We can see from the picture below that the crease of the cake filter paper can perfectly embed into the twenty folds of the filter cup. According to the introduction of Qianjie above, you should be able to speculate that the speed of water passing through the powder layer will be slowed down, because the high fit will reduce the exhaust channels and increase the water flow resistance.
In addition, the cake filter paper has a flat-bottom structure, and its powder bed will not have a structure with a narrow bottom and a wide top like a cone, so the distribution of coffee powder will be relatively balanced and the thickness will be relatively thin. This can allow the coffee powder to obtain different extraction efficiency. Because the powder bed is not as thick and uniform, the poured water can quickly contact the coffee powder at the bottom to carry out extraction. Then combined with the characteristics of high fit and slow flow rate of the filter paper, it will be easier to form immersion during the brewing process, and the uniformity during extraction will be further improved.
Therefore, when we use an origami filter cup with cake filter paper to brew, we can easily brew coffee with a solid taste, balanced taste, and outstanding sweetness. But just talking about the concept may not be so easy to understand, so we will use the same coffee bean on Qianjie to compare the difference between coffee brewed from origami filter cups paired with different filter papers.
Comparison of Origami brewing in different "forms". This time, the front street of the brewing will use the front street Panama Poquet rose in the bean list for comparison. The parameters used are the same: 15g powder amount, 1:15 powder and water ratio, 10-scale grinding of Ek43, 75% sieving rate of No. 20 sieve, fine sugar grinding, water temperature of 92°C, three-stage brewing, and the time is controlled to 2 minutes.
Boquet rose summer boiled with a conical filter paper has prominent jasmine fragrance, bright citrus acid, sweetness of honey, and the tail charm of oolong tea. The overall taste is smooth, clean and transparent, with rich and distinct layers; the Beauquet rose summer boiled with cake filter paper also tastes jasmine, but compared to the former, it will be heavier and less obvious. The citrus acid is relatively round, and the sweetness of honey is more prominent. The ending rhyme is still oolong tea, but its aroma will last longer. The overall mellow and sweetness are higher than the former, with balanced taste and long aftertaste.
To sum up, if everyone prefers coffee with prominent flavor and rich layers, then you can choose conical filter paper to match it with origami filter cups for brewing; and if you prefer coffee with high mellow and high sweetness, You can choose cake filter paper to match it. In addition to selecting the matching of filter paper based on the texture of the coffee, we can also determine the use of filter paper based on the difficulty of brewing. If you are a novice who has just started, Qianjie Association recommends that you use it with cake filter paper when using origami filter cups, because the powder layer structure of flat-bottom filter paper is more friendly to novices, has a higher fault tolerance rate, and makes it easier to make a cup of coffee.
