Filter paper can be said to be the most mainstream filtering tool in hand-brewed coffee today. Not only does it have excellent filtering effect, but the price is also very pleasant. Not only that, because it is a disposable consumable, we can directly discard it after use without cleaning, which is very convenient. Combining the three advantages, filter paper has become a must-have hand-flushing filter tool for every family.

But filter paper is not without shortcomings! Compared with coffee brewed with filter tools made of other materials such as filters and filter cloth, coffee brewed with filter paper will not be as fragrant and will be slightly inferior in comparison. The reason is that the filtering effect of the filter paper is too excellent, and it is also filtered out along with some substances that can enhance the aroma and alcohol of coffee (Note: Not that the filter paper is bad!). I believe everyone is familiar with this material front street, it is coffee grease. When you mention coffee grease, the first thing you think of is the thick, golden layer of Crema floating on the surface of espresso coffee. A specific product that can only be produced through pressure extraction, and because of this, it is also called the "concentrated soul of Italian style."

Indeed, Crema can bring a stronger aroma and a smoother taste to the concentration. But what Front Street is talking about is not exactly it, but one of the main ingredients that make up this layer of Crema, the oil of the coffee itself. During the extraction process of coffee, so-called emulsification occurs. The oil originally hidden in coffee will be broken down into extremely tiny droplets that blend into the coffee liquor to form a mixture similar to an emulsion. It is this layer of mixture that envelopes the gases emitted from the coffee powder, forming bubbles, and eventually evolving into golden Crema floating on the concentrated surface of the cup.

That said, Crema has two main components: oil and carbon dioxide. The main thing that can add aroma and alcohol to coffee is coffee grease. As long as we use the right parameters, even if it is not pressurized extraction, the oil of the coffee can be brewed, giving the coffee a stronger aroma and a more mellow and smoother taste. However, the amount or amount of fat in coffee will be affected by the use of filtering tools. The better the filtering effect of the filtering tool, the less fat will eventually be added to the coffee, and vice versa.

To sum up, the main reason why coffee washed with filter paper does not have the aroma of other filtering tools is that its filtering effect is too excellent, resulting in a large amount of oil being intercepted and unable to be added to the coffee. So if we want to make the brewed coffee more fragrant and drink more mellow and smoother, we can try using tools such as filters and filter cloths to brew coffee. This is partly the reason why coffee made by French press pots, siphon pots and other tools is strong.

But Qianjie is not saying that filter paper is bad. Filter paper has many advantages, such as those mentioned by Qianjie at the beginning. At the same time, because the coffee brewed by it does not have much oil or fine powder, it can have a very clean experience whether it looks or drinks. It has a completely different texture from other utensils! The following Qianjie used filter paper and non-woven filter paper to brew a pot of coffee with the same parameters. You can compare the differences between the two through the tasting descriptions of Qianjie.

Brewing sharing The coffee beans used in this brewing are Qianjie Jade Estate·Green Label Rose Summer in the bean list. The extraction parameters are as follows: powder amount used: 15g powder to water ratio: 1:15 Brewing water temperature: 92°C Grinding degree: 10 scale of Ek43, 75% sieving rate of No. 20 sieve, 24 - 26 grids of C40 (Because the non-woven filter paper is put into water quickly, grinding needs to be adjusted on the basis of these. 1 grid) Brewing method: three-stage use filter cup: V60

The brewing process is as usual. Use 30ml of hot water to steam for 30 seconds. After the steaming is over, use a small water stream to inject the second section of hot water around a large circle, totaling 120ml. When the hot water injected in the second section has almost penetrated, we can use the same water flow to inject the third section of hot water in a small circle. The third section of hot water is 75ml. Finally, we just need to wait for the coffee liquid to finish dripping, then we can remove the filter cup and finish brewing.

From the comparison of the above picture, we can see the very obvious difference between the two. The liquid surface of one pot of coffee is clean and flawless, while the other pot is covered with grease, so we can see a lot of oil from the reflection of the liquid surface. point of oil. Their corresponding filtering tools are filter paper and filter cloth. Filter paper group green label: The green label washed out with filter paper has a very clean taste, clear and outstanding flavor, and can taste the tail rhyme of jasmine, citrus, honey, and oolong tea. Filter cloth group filter cup: Although the flavor of the green label washed out using filter cloth is not as prominent and clear as the former, its tail rhyme will be longer, the mellow degree will be higher, smoother, and the aroma will be stronger.

Since the characteristics of the two cups of coffee are different, there is no comparability. If you are friends who like coffee with high mellow and strong aroma, you can use filter tools such as filter cloth and filter to brew coffee; if you are friends who like coffee with high cleanliness and clear and obvious flavor levels, then the filter paper is The perfect choice ~
