Does the coffee strainer work well? Why does the fat taste of espresso coffee taste bitter? What does Espresso's Crema mean? How to make good American coffee?
Every once in a while, some interesting little coffee toys appear on the market. For example, tools such as Lily Drip, which can change the structure of the filter cup powder bed, or Paragon, which can quickly cool coffee liquor. They affect coffee in various ways, making certain changes in the coffee we end up drinking. Today, the front street to share is also a very interesting small toy, although this thing is only recently appeared in the coffee circle, but in fact in our daily life, has long appeared with the same function of the product. And it is a coffee cup with a "filtering" function.
How is it? Does it feel very familiar from the outside? That's right! It has the same function as the oil filter in our daily life, which can separate the oil floating on the surface of the liquid. When it acts on coffee, it mainly separates the golden foam-Crema/grease-floating on the surface of the espresso. When Crema is filtered out, there are two slight changes in the coffee: one is that the taste becomes cleaner, and the other is that it will not taste so bitter.
If a friend has tasted coffee grease alone after the espresso coffee is extracted (after the grease is layered with the coffee liquor), then Qianjie believes that everyone should taste the obvious bitterness from this layer of grease, and sometimes even feel the grease. There will be a little bit of graininess in it. So when we filter out the oil from the espresso coffee, we can make espresso with less bitterness and a relatively cleaner taste. This is why this coffee cup is different from other special functions. But what we need to know is that the source of the bitterness is not the coffee fat itself, because the coffee fat (Crema) is mainly composed of lipids and carbon dioxide in coffee, and obviously neither of them provides obvious bitterness. The real culprit that causes the bitter taste of the oil is actually the very fine coffee powder hidden in the oil.
Since the filter holes of the espresso machine powder bowl are not too small and cannot isolate everything except coffee liquor like filter paper, very fine particles such as Crema/grease in espresso and coffee powder can be added to coffee through this filter hole. During the extraction process, most of the fine powder that is pressed out of the powder bowl will be entrained and floated on the liquid surface due to its light weight. The fine powder itself has a certain bitterness, so this leads to the oil with the fine powder begins to have obvious bitterness. If the grease is left for too long, the fine powder that originally floated on the liquid surface will sink to the bottom of the cup due to the crushing of Crema. The reason why we sometimes drink fine grains from coffee is because we drink these fine powders.
So we can know that the reason why this coffee cup with filtering function can make the taste of coffee cleaner and reduce the bitterness is because it filters out the oil and then filters out the fine coffee powder that is mixed in the oil and gives off the bitterness.
So, is this coffee cup worth buying? To be reasonable, whether this coffee cup is worth starting depends on personal preferences. As Qian Jie said, products with similar functions have actually been born a long time ago, so we can find a lot of "substitutions." Secondly, although it can reduce the bitterness of coffee, it can also make the aroma of coffee less intense. The reason is that it cannot filter out only the fine powder and retain the Crema/coffee grease. Qianjie mentioned earlier that Crema/grease is mainly composed of coffee lipids and carbon dioxide. In addition to wrapping carbon dioxide, lipids also have a certain aroma. When the oil is present, we can taste more aroma from the cup, and we will get a clear and lasting aftertaste due to the presence of the oil after swallowing the coffee. At the same time, the presence of oil can also make coffee have a more mellow taste. But if we filter out the grease, the characteristics brought by the grease will also be reduced.
But the way to play this coffee cup is believed to be more than that! Therefore, whether you need to buy this coffee cup depends on personal choices and needs. But if you want coffee to have higher cleanliness while retaining the oil and exuding aroma, Qianjie is not without a way to satisfy this "little greed" that has both fish and bear's paw. The specific method is very simple. We only need to put two round filter papers on the bottom of the powder bowl before filling the coffee powder, so that we can retain the oil and filter out the fine coffee powder. Then naturally, the coffee will be fragrant and clean!
