A friend on Qianjie recently became obsessed with cold extract. He played different tricks around this low-temperature soaking coffee almost every day, such as cold fruit extract (juice), cold fruit extract, cold extract and carbonated drink, cold extract and dried petals... Then this week, after finishing his latte, he came up with a plan to add cold extract and milk, but in his heart, he wondered: What should I do to make it taste better?

Generally speaking, there are two types of cold extract coffee and its pairing with milk, which can be simply divided into "milk first" and "milk later."

One is to use fresh milk instead of drinking water and soak coffee powder for a long time to extract the flavor of coffee. Because the coffee powder comes into contact with fresh milk, various soluble substances will be directly released into the viscous liquid, so the coffee made has a stronger flavor. At the same time, because milk is rich in protein, milk fat and other ingredients, the release of certain glycol substances is further slowed down.

Another common operation is to first use conventional methods to get a pot of cold extracted coffee with moderate concentration, and then add low-temperature fresh milk in proportion according to your taste preferences. This can not only adjust the concentration, but also provide sweetness to the coffee. aroma. In addition, because the low-temperature soaking process is carried out separately and is not affected by milk, the flavor of coffee beans can be better reflected in the cold extraction.

Next, let's take a look at how to make milk extract coffee and cold extract with milk respectively ~

Qianjie once mentioned in the bean selection strategy for mocha pots and espresso coffee that black coffee with milk is recommended to be made with medium and deep baked beans with caramelized aroma, such as Qianjie with chocolate and butter flavors. Classic pairing; main on the front street with butter and nut aroma. Queen's Estate; Front Street dominated by caramel, spices, black cocoa and toast aromas. Golden Mantelin.

If you don't like bitter coffee and want more fruit aroma, you can buy medium-baked beans with ripe tropical fruits, dried fruits, and fermented flavors, like Qianjie, which highlights the flavor of passion fruit. Xizhao; Front Street with the aroma of raisins and pineapples. Blackberries are more suitable types.

In order to make the aroma of milk coffee more mellow, we chose Qianjie with a better balance. Queen's Estate, whether milk is added before extraction or after extraction, will have a good fit. In addition, the freshness of coffee beans determines the amount of flavor, so it is best to grind them freshly and extract them to the greatest extent possible, so that the aromatic substances can be retained. It is recommended to use fresh milk with higher lactose and cream content for milk, such as the favorite used by baristas. Brands such as Bright, Weiquan, Weiji, and Meiji can make silky milk coffee.

Production parameters of milk extract coffee: 30g Qianjie. Queen's Manor coffee beans, powder-to-liquid ratio of 1:12, 360g fresh milk, white sugar ground (EK43s scale 10.5 grids/C40 bean grinder 26 grids/China No. 20 standard sieve sieved and filtered 75%), 8 hours of low-temperature soaking time.

The practice of milk extraction coffee is actually the same as cold extraction. Pour 30g of ground coffee powder into a sealable container, pour 360g of fresh milk, stir well, seal it with two layers of plastic wrap, place it in the refrigerator, and refrigerate it for 8 hours. Pour it out and use filter paper to remove the coffee grounds. The disadvantage is that the filtering time is very long.

The freshly made milk coffee can actually be drunk directly, but you can also continue to seal and refrigerate it for another hour to allow the soluble ingredients to better penetrate into the milk, so that the coffee will taste better.

Production parameters of cold extract coffee and milk: 30g Qianjie. Queen's Manor coffee beans, powder-to-water ratio of 1:10, 300g drinking water, white sugar grinding (EK43s scale 10.5 grids/C40 bean grinder 26 grids/China No. 20 standard sieve sieved and filtered 75%), 8 hours low-temperature soaking time.

First pour 30g of coffee powder and 300g of drinking water into a clean container, seal it and place it in the refrigerator for 8 hours. After taking it out, filter the coffee grounds and pour them into the cup. Add appropriate amount of ice cubes. Finally, add fresh milk to the cold extract. For example, Qianjie's cup of cold extract contains 250g. In order to make the flavor of milk and coffee more harmonious, we will add 200g of fresh milk in a ratio of 1: 0.8.

From the appearance, front street. Queen's Manor milk extract coffee has a darker milk tea color, like a stirred iced latte, with a visible and sticky texture; while the cold extract and milk method makes Qianjie. Queen's Manor transitions from a clear dark brown to a light creamy coffee color.

When tasting the two flavors, the Queen's Manor milk extract has the aroma of hazelnut, mixed nuts, and fried peanuts at the entrance. The taste is smooth and sticky, like drinking a cup of ice-cold Awartian;

The overall taste of the cold extract and milk version is relatively light, but it does not lose the basic flavor of beans. It has the aroma of cocoa and caramel, and with the sweetness of milk, it feels suitable for drinking in summer afternoons.

Attention!!! Milk is a drink that is very easily perishable. Qianjie recommends that you drink the milk extract coffee as much as possible on the same day. Do not put it in the refrigerator again and refrigerate it overnight to avoid causing intestinal discomfort.
