Brief introduction:
Xinglong Coffee settled in Xinglong, Hainan, in 1953, when Xinglong overseas Chinese Farm was just established. In order to realize the practice of "raising growth in the short term", that is, using short-term crop income such as coffee, citronella and rice to make up for long-term crop income such as rubber, Xinglong began to introduce coffee from Chengmai Fushan.
After a long period of research, it has been found that although the large seed of coffee is high-yielding, its quality and taste is poor; although the taste of the small seed is excellent, its growth environment is plateau climate, the elevation of Xinglong is very low, and planting small seed not only has low yield, but also the life span of the tree is not long. Finally, they began to plant Robusta seed coffee on a large scale as the most suitable variety for prosperous cultivation, and the prosperous altitude, latitude and climate provided a good guarantee for the settlement of Robusta seed coffee.
At that time, the planting area of coffee was very large, and the whole Xinglong had more than 3000 mu. In order to ensure the quality of coffee beans, coffee beans are cooked and picked. At that time, the workers were too busy, and the students on the farm often came to the plantation for half a day to pick coffee. After the 1990s, with the continuous decline in the price of coffee beans, the planting area of Xinglong coffee is also decreasing. Up to now, the planting area of coffee in Xinglong area is less than 1000 mu.
Xinglong Coffee always reminds you of returned overseas Chinese in Southeast Asia and the poignant stories behind them. Xinglong's stir-frying technology adopts the Southeast Asian method. How to prepare and roast Hainan Xinglong Coffee
Hainan Xinglong coffee roasting machine is often used to stir-fry coffee. It takes 15-20 minutes for each batch of coffee beans to keep the temperature 177240 ℃. Stir-fry the beans until they are the same color as the standard sample, remove and dry, grind them into coffee powder in time, pack and seal. In order to improve the drinking quality of coffee, ingredients should be added to stir-fry 12.5 kg coffee beans (without seed coat), 0.15 kg of salt, 0.25 kg of egg white, 0.5 kg of cream and 2.5-4.5 kg of sugar.
Stir-fry the coffee beans in a pan, start over a little heat, stir-fry until brown, add salt, stir-fry for about 10 minutes, add egg white, stir-fry egg white until brown, add cream, stir well, then add white sugar, after the white sugar is melted and fully mixed with the beans, use a gentle fire (finally, a small charcoal fire), stir-fry until the beans are brown, touch the beans with your hands, but the sugar is not sticky. Remove and cool (electric fan or fan can be used), grind powder immediately after cooling, pack and seal. Roast a pot of coffee beans for about 2.5 hours.
Matters needing attention in the roasting process of Hainan Xinglong Coffee
Fan constantly, remove the seed coat, prevent the seed coat from being fried and smashed, and make the drink bitter.

Note: Hainan Xinglong coffee frying and grinding method is not suitable for other Arabica coffee beans.
