The method of making coffee

Q: many people don't like coffee because the coffee they drink is bitter, and many of them are not only bitter but also astringent, so most people drink coffee with sugar and milk, and many people don't like black coffee. Is the coffee bound to be bitter? is the more bitter the better?

J: good coffee should be bitter, not hard to swallow. A good cup of coffee must make you want a second cup after drinking one cup.

In fact, a lot of coffee is not bitter, such as sour fruit, flowers and other flavors, which involves more professional knowledge of coffee. This is actually related to the baking degree of the coffee. If the roasting process is relatively shallow, you will be able to retain more of the acidity and flower aroma of the natural fruit, and it will be sour. If you bake it deeper, you will have a sense of chocolate and caramel flavor. As well as the nutty aroma, it will be bitter.

The coffee that people often drink is very bitter, one reason is that the coffee beans are not good or fresh enough, and the second is that there is something wrong with the method of making coffee. Some guests complain to me that their coffee is not good, so I will ask him what he uses to make coffee. He said to cook it in a pot.

Many people who have no professional knowledge think that "brewing coffee" means buying coffee powder and boiling it in a pot with water, just like boiling milk and soy milk. This must be over-extracted, so the brewed coffee will be very astringent and untasty.

Q: what is the correct way to make coffee?

J: many people say that coffee tastes the same as traditional Chinese medicine. Maybe your brewing method is incorrect. In terms of water temperature, no matter what coffee utensils are used to do it, it is not 100 ℃ boiled water, it is about 90 ℃.

Of course, with different utensils, according to the degree of roasting of coffee beans, for our daily speaking, no more than 95 ℃. Generally speaking, the water in the water dispenser will not boil to 100 ℃ and can be used directly. If the water is boiled, it needs to cool for 2-3 minutes.

Q: what does coffee-flavored food have to do with coffee?

J: in fact, the taste of coffee in the food is added, not extracted directly from the coffee. I watched the harvest in Yunnan, where I had been to coffee in December. During the coffee harvest, smaller or insect-bitten coffee fruits were piled on the ground-I thought they should be thrown away, but they didn't.

A few days later, they were sold to the food processing factory to make coffee-flavored food, and they were processed for many days, and the things piled there slightly fermented, but because they were only used to add flavor, they will not choose good coffee beans, or people are advised to choose the original food or drink.

The efficacy of coffee

Q: does coffee make pigmented skin black?

J: when it comes to this problem, there are not only coffee but also black food. Black food has many benefits to our health, such as grapes are also black food, but the dark skin of grapes is rich in antioxidants, which is good for the human body. For example, eggplant and sesame seeds are also black, which is also beneficial to the human body. However, nothing should be eaten too much. According to our Chinese habit of drinking coffee, there is no problem drinking one or two cups a day.

Q: so it's actually good for your health, right? what are the benefits of coffee?

J: coffee is very good for your health. The advantages must outweigh the disadvantages. First of all, a large number of medical proof that coffee can promote our metabolism; second, some authoritative medical literature, data and research reports also point out that coffee can reduce the risk of hyperlipidemia, hypertension, heart disease and diabetes.

But the premise is, to drink coffee healthily, to master some methods, and to drink good coffee, drinking a lot of instant coffee is definitely not good.

Q: it is well known that the most important ingredient in coffee is caffeine. what effect does caffeine have on the body?

J: too much caffeine can be lethal. The caffeine content in a cup of coffee is very low and the metabolism is very fast, so you want to say that it is impossible to absorb a lot of caffeine in a short period of time.

After all, coffee irritates our stomach, so first, don't drink it on an empty stomach, second, drink less if you have a bad stomach, and third, a small number of people are very sensitive to caffeine, so you may have to control it a little bit. Don't drink it after noon.

It is recommended that very sensitive people try to drink a cup of coffee in the morning, after a period of time, the sensitivity to caffeine will be reduced, drinking coffee will not cause insomnia at night.

Q: can coffee help you lose weight?

J: sure, but I really don't recommend drinking it on an empty stomach in the morning. To achieve the effect of losing weight, you should drink a cup of black coffee immediately after each meal, which will speed up metabolism, promote digestion and reduce absorption. But don't drink caramel macchiato, vanilla latte, or instant coffee.

How about instant coffee?

8. Is there any requirement for instant coffee brewing? Does it have the same effect as coffee?

J: instant coffee has no requirement for water temperature. Any temperature is fine. Instant coffee due to the poor quality of raw materials, can not give full play to the health benefits, let alone can not be used to lose weight.

Q: why is instant coffee bad? What is its origin?

J: instead of coffee powder, 10% coffee extract is used in instant coffee. To make instant coffee, the beans are first made into espresso, and then the water is removed, leaving a soluble substance.

However, the raw materials selected for instant coffee production are coffee beans of poor quality, and the caffeine content is also very high. In addition, making the concentrate and then evaporating the water is tantamount to secondary extraction, which will lead to the deterioration of the taste of coffee, and it is necessary to add a lot of additives to reconcile its taste, so the taste of instant coffee is similar. At the same time, instant coffee is also very unhealthy.

Q: is there any value in instant coffee?

J: the first wave of coffee represented by instant coffee has been rapidly popularized all over the world, because it is cheap, easy to carry, can be washed with water, and the popularization rate is very high. The second wave of coffee is represented by the current chain coffee shops, where you can drink fresh freshly ground coffee. The third wave of coffee is boutique cafes, which make coffee using boutique coffee beans that can be traced back to their origin.
