Ever heard of cat poop coffee? It will soon be available at Rogers Park on Chicago's North Side. Owner Antony van Zyl plans to open Nibbles and Nosh in late May.

This coffee bean, commonly known as Cat poop coffee, is called Kopi Luwak and comes from the droppings of a civet cat in Thailand. The civet loves coffee berries, chewing the pulp and excreting the stones. Manufacturers collect the civet's droppings, wash them, and extract the seeds. After digestion by civet cats, the pit has a special coffee aroma.

Van Zyl said he imports the beans from Thailand for $30 to $80 a pound and plans to sell them for $12.50 a six-ounce cup. Van Zyl uses a siphon coffee machine to brew coffee, two cups at a time, in 20 minutes.

Van Zyl argues that this rare coffee flavor is worth the high price and long wait."It's not available anywhere." He said the coffee was rich and soft, with a nutty and cherry aroma and milder than traditional energy drinks.

Van Zyl's coffee shop is scheduled to open in late May and will also serve frozen beer, egg cakes, vegetable plates, English breakfasts and more. But he hopes customers will have the guts to try cat poop coffee.
