How to choose a cup of coffee that suits you in a cafe?
Professional barista communication, please pay attention to coffee workshop (Weixin Official Accounts cafe_style )
Now walk into a coffee shop and you will see not only cappuccino, latte, mocha, etc., but also coffee from many different countries. The initial contact with fine coffee people have some understanding, order up handy.
So how do you pick out the right coffee from these dazzling country names if you haven't been exposed to fine coffee?
The average boutique coffee shop will have 3-5 or more single coffee beans for you to choose from. But for people with choice disorders and first-time drinkers, choosing coffee is a real challenge. Then you can listen to the barista's introduction. Wash beans? Sunbaked beans or honey? Dark or light medium? A little sour? Sweet? Or thicker? African beans? American beans? Asian beans? As the questions mounted, I decided to skip the coffee and settle for a latte.
But life is fun if you try, isn't it? Let's talk about the main flavor of the three major coffee treatments. (Coffee green bean treatment method, what is sun, washing, honey treatment?)
Solarization method: acid is lower, sweetness is more obvious, touch (Mouthfeel) is the clearest, cleanliness is slightly lower.
Washing method: acid is more obvious, cleanliness is better, touch moderate, the quality of raw beans is the most consistent.
Honey treatment or Brazilian peeling and sticky treatment (PN) treatment: moderate acid, sweetness is better than washing method, cleanliness is better than sunlight method, moderate touch.
Among the three treatments, washing had the highest stability, the coffee after treatment was sour, solarization was the sweetest, and honey treatment was between the two.
The roasting degree of coffee beans can be roughly divided into the following four stages: 1. Light roasting;2. Medium roasting;3. Medium roasting;4. Deep roasting.
Light roast to medium roast stage, coffee beans taste quite personality. Coffee roasted above medium depth has a lower concentration and less personality, and coffee beans roasted at medium depth have a heavier flavor than beans roasted at depth. Deep roast coffee beans taste fresh and simple, but also less personality.
Coffee beans are mainly produced in Africa, Central and South America, Asia and island regions. African beans generally have orange, berry, sugar cane sweet acid flavor, common yejia sherry, west damole producing beans. Central and South American bean flavor, moderate, Panama beans mostly jasmine flowers, nectar sweet, bright and varied fruit acids. Costa Rica is sour and soft, with chocolate nutty flavors. Asian beans and island flavor, more mellow than Central and South American beans and African beans, mostly medium-dark roast, slightly herbaceous, pine, spice aromas, low acidity. Island beans are light and mild.
The next time you go to a coffee shop and want to try a single bean, you can ask the barista first, do you have dark roasted beans? Do you have Indonesian beans? Do you have any beans with a floral aroma?... Then enjoy the elegance of the barista's hand brew.
I wish everyone can find the most suitable cup of coffee for themselves, and the most suitable person for themselves.

Communication of professional baristas Please follow the coffee workshop (official Wechat account cafe_style) when dehydration goes through to the change of raw beans to yellow, indicating that a series of chemical reactions such as Maillard reaction, which are crucial to the production and transformation of coffee flavor substances, begin to take place actively. However, at this time, it is not said that the dehydration of raw beans stops, but the baking process begins to change by mainly removing the moisture of raw beans.
