Moved by drinking Alishan coffee, Mr. Ito came to Taiwan from Japan in 2012 to develop. Five years later, he spoke Chinese more fluently, but what remained unchanged was his continued enthusiasm for coffee. Goodman Roaster (Alisan Project) is a coffee brand founded by Mr. Ito. It has four strongholds in Taipei and is located in the first store on Tianyu Street. Mr. Ito's busy figure is often seen shuttling through it.

There is a bean dryer in the glass cubicle, where Mr. Ito is doing his daily work, grinding some beans that were baked in the morning, shaking a few times, and the aroma overflows. this is freshly ground, and then inject hot water and wait for a few minutes. break out a clear mirror of the coffee grounds floating on the top, and scoop up a small tablespoon to sip when the temperature drops slightly. But in fact, because of his work, Mr. Ito was used to baking stronger coffee; the opportunity for change was all after going to Alishan to try light-roasted coffee, opening up a new feeling on the taste buds.

"A good raw bean doesn't need too much baking, just like meat. A good meat can be roasted to get the original flavor of the meat, and so is coffee." However, the taste is still subjective, and some people are not used to the shallow-baked flavor. Mr. Ito said with a smile, "it doesn't have to be so many guests. It doesn't matter if the number of guests is a little less. People who like light baking and like our coffee will come naturally."

In the shop of Goodman Roaster, in the uppermost residential area of Tianmu, there are not many passers-by, all of whom love coffee. On weekdays, the flow of people in the store is like a steady stream, uninterrupted, but not arrogant. The taste of drinking coffee is very similar to that of Taiwan Day, but the drinking habits and culture are a little different. Goodman Roaster is not defined as a coffee shop by Mr. Ito. I hope that in everyone's impression, there is a shop that sells coffee beans. Because you like to drink coffee, besides going to your favorite store or buying some favorite beans to go back, you can also feel comfortable at home and let the smell of coffee float into your life.

Picking up Alishan coffee unknown to the Taiwanese, roasting out the purity of beans, raw materials produced in Taiwan, and insisting on the Japanese soul, Mr. Ito extracted a cup of good coffee with the essence of Taiwan, hoping to let more people taste it.
