In Beijing, hutongs carry people's daily life, and the cafes here have gradually established a connection with the brick by brick in the hutong.

Compared with the extreme simplicity of the gradual convergence of many city cafes, the shops in the hutong are more "rough" in Beijing, each with a private imprint.

At the beginning of this year, hutong cafes were renovated on a large scale. The emotional debate around them has pushed the topic to the forefront, but coffee lovers may be more concerned about the balance and symbiosis between hutongs and cafes.

The future is still full of uncertainties, and within a week of writing this article, two stores have issued relocation announcements.

We walked the streets, visited nearly 30 cafes, drank more than 100 cups, and wrote this hutong coffee map. I hope we don't miss it while some good shops are still there.

Dongcheng District

1 | Metal Hands Coffee

Metal Hands Coffee has several branches, all of which are in hutongs.

Among them, the area of the Jiaodaokou store is larger, and everyone who walks into the store will be attracted by a giant drawbar coffee machine. The coffee machine's robotic arm, which is full of personality, also echoes the name of the store.

Although it has been sealed off the floor-to-ceiling window and lacks the original transparency, there is an old wall painted with Li Bai at the new entrance. I heard that you can just sit here at night to see the moon, and you can also raise a cup of coffee to "invite the moon".

Although the decoration style of each branch is slightly different, the quality of coffee is relatively stable. I like the "Dirty" here very much. Unlike drinking a latte, I pour espresso on a cup of iced milk. Instead of stirring, I take a sip and feel the taste change from coffee to milk. This practice tests the ability of coffee products.

In addition to milk coffee, soda coffee is also worth drinking.

Baristas may account for only 10% of the production from seeds to cups, but this is the last level presented to guests and determines the quality of the entire cup of coffee. It takes 100% effort for the 10%, and that's where the name comes from.

The shopkeeper is a beautiful Beijing girl who decorates the shop in a warm and everyday way. The storefront is small, so a whole row of chairs against the wall is designed flexibly, which can be enjoyed by one person or become a large space through arrangement and combination.

In-store coffee comes from different roasters, including foreign brands and domestic baked beans. With the high quality of the beans and 10% of the shopkeeper's heart, this cup of coffee conveys 100% beauty to the guests.

3 | The Temple of Earth and I.

At first, this was the customer lounge of the garage, and gradually it became "me and The Temple of Earth".

The gray-white space has three layers, each with a unique design. Coffee has become the best connection between people and space.

At the same time, the store offers 15 kinds of individual coffee beans from different producing areas, using different treatment methods. We had a cup of Kenya, although the acid is not strong, but the taste of sweetness and rich flavor is amazing.

Sitting alone on the long concrete slab at the entrance, leaning against the bar and facing the red wall of The Temple of Earth, you will naturally think of Mr. Shi Tiesheng. After sitting for a while, I got a kind of peace of mind.

Xicheng District

In front of the red door and green trees, the old bike came and went slowly. If you don't pay attention, you may not notice the coffee studio hidden in the political hutong.

Compared with ordinary cafes, this is also a coffee exchange space. The host welcomes everyone to communicate and learn everything about coffee. The opposite room will also hold some literary parties to share ideas. We happened to have a wonderful tea party on the day we went.

Here I drank a special cup of coffee: make ice cubes with extracted hands and pour in iced milk. It doesn't taste light when you drink it, but blends well with milk. This coffee originated from an own incident in the store, but it was unexpectedly very popular and has since become a regular menu customer.

The store also offers homemade desserts and ate a matcha mousse cake, which is still missed to this day.

2 | Fusan Coffee

The shop was only half a month old when we went there, but the coffee and desserts were excellent.

The interior is decorated in a "new Chinese" style, with a coffee bar from the 1950s on one side and a whole wall of books on the other.

The shopkeeper happened to be testing coffee beans when we went there, and we had the privilege of drinking a popular champion bean-Sakuran from Ethiopia. This is not the first time we have encountered this bean, but Fusan's single cup of coffee filled the mouth with flowers and fruit, making people feel that the title was well deserved.

I walked the hutong for a few days, interviewed a lot of shopkeepers, and heard a lot of real thoughts.

In their reply, they were confused and didn't know what to do, but they didn't lose hope.

Although imported, cafes are slowly showing their temperament and vitality in the hutongs with a history of more than 800 years, and they are becoming a part of urban life.

Despite the changes in the outside world, the beauty of coffee itself will not be buried.
