Why is the Piccolo latte so small?

Piccolo first appeared because roasters or baristas wanted to test the coordination between beans and milk, but didn't want to make a large latte about 200~300ml, so they wanted to reduce the proportion of milk. baristas later introduced this "small latte" in the menu for customers who don't want to eat too much caffeine or drink large lattes. Perhaps some friends will be confused, the price is obviously similar to the latte, the cup quantity is so small, it is not a "loss".
With the development of boutique coffee, coffee people began to pursue a variety of regional flavor of coffee, such as fruit, flower flavor. A variety of exquisite individual coffee is also used in espresso, according to the large cup of latte, the proportion of milk is higher, so it is more like coffee-flavored milk, inclined to a balanced taste, unable to highlight the characteristics of beans. So how to make a Piccolo latte?
If you have been to the Qianjie store for coffee, you should have noticed that the espresso produced in Qianjie does not contain a Piccolo latte. Here, Qianjie tries to reproduce this "unpopular" drink to see how it tastes.
Qianjie production Piccolo will use a small cup of about 90~100ml, the ratio of coffee to milk is 1:5, preheated in advance to ensure the taste of the coffee as far as possible. A single copy of Ristretto will be used as the substrate. Espresso Ristretto, which means "limited" in Italian, is also called espresso. It usually takes only the front and middle part of Espresso, so it has a stronger taste and a more concentrated flavor. Qianjie will use 20 grams of coffee powder, extract 28 grams of coffee liquid, take 20 to 25 seconds, a single serving of Ristretto is 14 grams, first pour into the cup.
Milk is more particular about the part, you know, the less milk is difficult to deal with. Choose a 350ml milk tank in front of the street and pour in 100ml milk. Piccolo does not need to be on a par with the mouth of the cup, so it retains a milk foam layer similar to that of a latte, with a thickness of about 0.3~0.5cm, and the milk temperature is controlled between 55 ℃ and 60 ℃ to ensure that the mouth will not be hot at the entrance. Blend evenly with Ristretto as much as possible, start to draw flowers out of seven points, and the newly made piccolo tastes best for direct drinking.
The flavor of coffee comes from the coffee beans used, and the Italian coffee produced by Qianjie stores is concentrated by using the "sunflower warm sun blend coffee beans" extracted by Qianjie self-baked.
