For professional baristas, please follow the coffee workshop (Wechat official account cafe_style)
The world is too noisy, the lover is too sticky, the cat is too cold, the work is too heavy, so make a good cup of coffee for yourself and enter your own small universe!
Step1. Select coffee beans
Coffee beans are simply divided into light roasting, medium roasting and heavy roasting. Coffee cherries are actually like fruit. Good coffee beans have aromas of fruit, flowers, cocoa, nuts, etc., usually the lighter the roast, the more sour, the more they can drink the essence of coffee beans; on the contrary, the heavier the roast, the more bitter the taste is. But some people just like the strong smell of coffee after re-roasting, especially coffee fans who have been drinking coffee for decades.
Step2. Grinding
A-very fine grinding: the particles are the same size as sugar. Suitable for brewing utensils: Italian espresso machine, mocha pot.
B-Fine grinding: particles are between granulated sugar and fine granulated sugar. Suitable for brewing utensils: ice drop coffee.
C-medium grinding: the particles are between fine sugar and coarse sugar. Suitable for cooking utensils: siphon (syphon), Philharmonic pressure, filter paper filter cup, American coffee maker.
D-rough grinding: particles are similar to coarse sugar. Suitable for cooking utensils: French filter kettle, flannel.
CAF É note
1. After coffee grinding, the contact area with the air becomes larger, so it is easy to oxidize and affect the flavor. Grinding before brewing is definitely the key to making good coffee. Even using a cheap hand grinder is better than buying ground coffee powder directly from the store.
two。 In order to avoid peculiar smell, the bean grinder should wipe the blade machine with a wet cloth every time it is used. When selecting a bean grinder, please choose those who grind the particles evenly. If the thickness is uneven, you can sift through the problem and improve the purity of the coffee.
Step3. Control water temperature
When you ask coffee workers about the temperature of the water, you often get strange numbers such as 92 degrees and 87 degrees. Every coffee worker has his or her favorite water temperature, which is usually adjusted according to the taste. Generally speaking, high water temperature can brew the personality of beans, bitterness and sour taste can be expressed; low water temperature brewing out of the taste is warm and smooth, more can extract sour taste.
Step4. Brewing
There are many coffee shops abroad, and there is not a single Italian coffee machine in the shop. All the coffee is made by hand. Hand-made pot is the best way to show the personality and skill of brewers, sometimes even in a bad mood.
Ratio of powder to water: 1:12
Suitable for beans: light, medium or medium heavy baking; coarse to medium grind.
Ultra-simple do not fail to hand Mr. Clever smart filter cup!
Step1. Fold the filter paper into a smart filter cup, rinse the filter paper with hot water, and pour in 12-15 grams of coffee powder.
Step2. By turning in a circle, pour into the hot water of 85-94 degrees and rush to the eight-tenths full of the filter paper.
Step3. Stir with a spoon and soak for about 40 seconds.
Step4. Time is up, turn the valve away and finish dripping and enjoy it.
How to choose filter paper and filter cup?
1. Coffee filter paper is sold in many places. It is recommended to choose unbleached brown filter paper and wash it slightly with hot water before brewing. UCC, Tiamo, Kalita, Hario, pearl horse and other brands are the love of many coffee fans.
two。 Generally speaking, the filter cup can be divided into two types: cone-shaped filter cup and ladder-shaped filter cup. the flow rate of cone-shaped filter cup is fast, and the extraction time is short, so it needs better technology to control. Beginners, it is recommended to use ladder-shaped filter cup to brew first. Hario, Kalita and Tiamo are all good brands.
3. In addition to filter paper, there are metal strainer and flannel to choose from. The metal filter can flush out the oil of the coffee, and the flannel filter cloth can extract more aromatic substances because it has been filtered for a long time.
