Sift out floating beans
First pour the harvested coffee fruit into a large trough, and the ripe and full fruit will sink to the bottom of the water; the underdeveloped or overripe fruit will surface, and these floating beans need to be removed from the poor quality beans.
Remove the pulp
Then use pulping machine (pulp planer) to remove the peel and pulp of the coffee fruit, and the immature fruit will be screened out at this stage because it is not easy to separate the pulp. After the pulp screening machine, all that is left is pectin, sheepskin and seeds.
Pectin removal by fermentation
Through the fermentation process, pectin is removed by biodecomposition. The fermentation process is about 24-36 hours, during which the pectin must be stirred frequently to speed up the separation of pectin from the seeds. Water washing fermentation produces acid substances such as citric acid, malic acid and acetic acid, which seep into raw beans, making the beans sour more sour than in the sun. After fermentation, rinse the coffee thoroughly with clean water. At this time, the coffee is about 57% moisture.
Drying
In order to reduce moisture to the desired maximum of 12.5%, parchment coffee is dried in sunlight, in a mechanical dryer or a combination of both. It takes 8 to 10 days to dry. Then store the parchment coffee.
Shelling
Finally, after drying, the sheepskin wrapped on the coffee beans is removed by hulling to get the raw beans.
