Key one: different varieties, different caffeine
Arabica and Robusta beans should be very familiar to coffee drinkers, but what you may not know is that there is a big difference in caffeine content. Robusta has two to three times more caffeine than Arabica! This is actually related to the altitude of growth:

Robusta is usually cheaper and is mostly made into instant coffee, which is a common coffee at home, so many people are prone to insomnia and sleeplessness. The depth of baking is different, not only the flavor in the cup will be different, but also the caffeine content. Generally speaking, the deeper the beans are roasted, the more caffeine they contain. As a curious baby, you must be wondering why? The melting point of caffeine is about 230 °C, so the roasting process does not actually reduce the caffeine of a single coffee bean, but because water evaporates more during deep roasting, more coffee beans are used when compared to coffee powder of the same weight (that is, more coffee beans), and deep-roasted beans have more caffeine than light-roasted beans.

Key 3: different treatment methods, different caffeine
Post-processed coffee beans, such as solvents, Swiss water washing, supercritical carbon dioxide and so on, can dispose of caffeine when they are raw, and even pregnant women can drink it. Among them, solvent treatment is not recommended, because there will be residual problems. The disadvantage of special treatment is that the flavor will be slightly damaged, but in terms of caffeine, you can consider it.

In addition, the molecule of caffeine is very small, about the same as citric acid, it is an easily soluble ingredient, so some people say that the longer the extraction time, the more caffeine will be dissolved, but this is not entirely true.
Some coffee beans, untreated, are half as caffeinated as Arabica, such as the pointed bourbon, a rare and natural low-caffeinated variety discovered by the French on the island of bourbon in 1810. The beans are shaped like grains of rice and the flavor is very good. Unfortunately, because they are easy to get sick and the yield is small, the price is very expensive, and money may not necessarily buy them.
