The third of the Golden Cup Theory of Coffee: how to use the refractometer Meter in the Measurement of TDS
For professional baristas, please follow the coffee workshop (Wechat official account cafe_style)
The golden cup theory has existed for at least half a century, but one of the reasons why it has attracted much attention in recent years is probably that we have a convenient tool for testing coffee TDS-Coffee/Espresso Refractometer launched by VST. There are many tools to measure TDS, and some people say that sugar meters can also be used, but these are not so reliable, mainly for the appropriate measurement range and accuracy of coffee. This is a good topic, and we are going to discuss it in the future, but at this stage, let's take a look at how to use this kind of meter.
The first thing to say is that you have two new / old refractometer models in your VST store, and each has:
Coffee version: used to test coffee
Coffee/Espresso version: coffee and espresso General Edition
Bundle version: attach the version of ExtractMoJo Pro
Basically, I don't think it's necessary to use ExtractMoJo, because when you finish reading this series, you can count it all. But naturally ExtractMoJo is convenient for you to do this, and there are famous golden cup pictures, which can be used if you don't care so much about the price, or if you don't want to do the math yourself. In addition, VST launches different versions of MoJoToGo on iPhone and iPad, which are cheaper, especially the iPhone version, which can be considered.
Our machine here is to introduce the use of the "old version". The reason for this, of course, is that I only have the old version. So just give everyone a sense of how the process is, and then how to use it.
Step 1. Let the coffee cool
One thing to note is that the so-called TDS measurement seems to measure how many other substances are dissolved in the water, but in fact it is converted by refractive index (this is another mouth bubble course we will introduce later). These calculations are related to the temperature, so pay special attention to the fact that your measuring machine and coffee need to be at room temperature! In other words, do not put the hot coffee on the VST Coffee Refractometer when you are excited. We need to put a little bit of coffee in a dry and clean cup, wait for room temperature, and then put it on the machine to test TDS.
Step 2. Drop a few drops of coffee and wait on VST Coffee Refractometer.
The purpose of waiting a moment, of course, is to make sure that the coffee and the machine are all at the same temperature, and then the most important step is to stabilize it.
Step 3. Press READ to read TDS value
If the value is not TDS, press the MODE button and press the button a few times to get the TDS value (it's easy to tell the difference between numbers like 1.43).
Finally, of course, it is to clear your lovely measuring machine, and then calculate your grades.
Correct your VST Coffee Refractometer
When you want to correct, put pure water on the machine, of course, you should pay attention to the temperature. Then press CAL for at least five seconds, then press and hold CAL while pressing READ, and finally run until you see END. This is the old version of the correction method, the new version seems to be a little easier.

The second golden cup theory of coffee: what is TDS? TDS reference values of countries all over the world
Professional baristas Please follow the Coffee Workshop (Wechat official account cafe_style) We said last time that regardless of whether we brew coffee using cat-and-dog brewing, our goal is to extract about 20% of the coffee. In order to preserve some space, we allow 18% and 22% to be acceptable. To achieve this goal, of course, it has not been said that we have got the perfect coffee. But...

The fourth Golden Cup Theory of Coffee: the calculation of extraction rate of hand-brewed Coffee
The exchange of professional baristas please follow the coffee workshop (Wechat official account cafe_style) We are now starting to implement, first of all, we will discuss the calculation of extraction rate by hand pulping method. Some people may wonder why we need to discuss the extraction rate by different cooking methods. And we will soon find that the calculation of the extraction rate by hand impact method is basically the calculation of the extraction rate determined by most people.
