For coffee lovers, part of life is to find three or five friends, drink coffee from different manors in different countries, collect coffee-related utensils, and bring fun to life. In terms of diversity, the coffee maker can be said to be unique in this respect, in addition to a variety of shapes, the material is also very different from its interest, copper, stainless steel, enamel pot. In addition, the technical rigor is not inferior to the tea culture.
In our daily life, we often see this way of making coffee with fan-shaped filter paper. to put it simply, it is to make hot water pass through coffee and filter paper to extract delicious coffee which feels clean.
This simple and convenient way of brewing coffee was invented by a clever German housewife, Melitta Bentz, in 1908. Often upset about not being able to brew a cup of clean-tasting coffee, she tore off her son's notebook because it was a kind of blotting paper with a hole in the bottom and combined it with a copper can with a hole in the bottom. the world's first coffee filter cup using filter paper appeared in her kitchen. In the same year, Mrs. Merita applied for a patent, and the hundred-year-old brand was born.
Flavor performance of hand-brewed coffee
There are many factors affecting the flavor of hand-brewed coffee, such as the proportion of extraction, the thickness of coffee powder, water temperature, steaming time, water injection speed and so on. For beginners, the first difficulty is how much coffee powder should be used to make how much coffee?
In general, the 1:10 or 1:12 range is acceptable, that is, 10 grams of coffee powder extract 100ml of coffee liquid, the thickness can be adjusted according to personal preference, so the design of the common coffee bean spoon, one spoon is 10 grams.
To solve the problem of the thickness of coffee, the performance of the taste depends on the control of water temperature. If the same coffee beans are used for brewing, based on 90 ℃, the higher water temperature will make the coffee more bitter, while too low water temperature will make the coffee more sour, and the water temperature will also affect the aroma presentation.
Convenient use of hand-brewed coffee
The main reason for the popularity of hand-brewed coffee is that it is easy to clean after use, filter paper is washed and dried and recycled as paper, while used coffee grounds are used as compost or deodorant, practical and environmentally friendly. The price of related utensils is also lower than Italian coffee, a simple stainless steel hand pot, sometimes less than a thousand yuan can be bought. The actual operation does not require complex steps, and it is usually easy for someone to demonstrate it once in front of it.
The operation of hand-brewing coffee
Hand-brewing coffee is easier to learn than to master, mainly because the factors in the whole process are difficult to control, especially coffee beans with different roasting depth, there are many differences in brewing. But as long as we grasp the following points, we can almost achieve good results:
(1) handmade pots, filter cups, filter paper, and the next pot for packing. As long as these are ready, delicious coffee can be brewed at home.
(B) put the filter paper into the filter cup and recommend using unbleached filter paper so that there will not be the problem of fluorescent agent.
(3) first soak the filter paper with hot water to eliminate the smell of the paper.
(4) pour the coffee powder into the filter paper, and a small hole can be set aside in the center, from which it can be washed into hot water later.
(5) from the inside to the outside, soak all the coffee powder by injecting a small amount of hot water first, and wait for 20 Murray for 30 seconds. This process is often called "steaming". Fresh coffee beans will show a phenomenon of expansion at this time, and coffee beans that have been stored for too long cannot be reached because of moisture or exhaust.
(6) when hot water is continuously injected, the thickness of the water column shall be kept stable and repeated in a zigzag loop, and the total amount of water can be divided into two or three times.
Introduction to the utensils for making coffee by hand
The hand-punching pot with a flat, thin-pointed spout in the shape of a crane mouth can pour out a stable and meticulous flow of water, while the spout with a larger opening is sometimes used to brew a large amount of coffee. And the filter cup can often see trapezoidal and conical these two, dripping is three-hole and single-hole design, which involves the flow rate and other issues, depending on personal preferences. According to the shape of the filter cup, the filter paper can choose a non-bleached material to avoid fluorescent agent residue.
