[Characteristics of various coffee beans]

Mantning

South Sumatra, Indonesia, has a relatively high degree of body, bitter taste in a single product is more obvious, acidity is low, and the general baking degree is deeper.

Grading: The quality of defective beans is divided into 7 grades from Grade1(G1) to Grade6(G6), and G1 is the best. In particular, gold manning, contrary to common understanding, is not a grading standard, but PWN selects full-grain, larger size beans, named gold manning, and registered trademarks. So strictly speaking, only PWN beans can be called golden mantinin, and other beans of the same or better quality cannot be called golden mantinin.

* Yega Shefi

Sidama region, mention yejia sherry, description is "strong floral, subtle fruit acid, soft bergamot and lemon flavor", a little floral and fruity smell, taste on the sour side, like this sour yejia sherry coffee layer feeling is good.

Grading: Yejia Shefei's grading system is a bit chaotic, the earliest according to the treatment method according to SCAA divided into washing: G1, G2, sun: G1, G3, G4, G5(no G2), the same number of smaller grades. But it seems that in previous years, Ethiopian officials established another classification system, and all exported coffee beans were collected anonymously on the Ethiopian Commodity Exchange (ECX), where they were officially graded by cup. Fine beans are divided into two groups A and B, each group is divided into 1 and 2 grades. Group A was Ye Jia Xue Fei, which meant that the high-quality Ye Jia Xue Fei beans were A1 grade. This anonymity makes it difficult to trace individual farms. Now some domestic sellers are still using the old G1, G2 classification standards, and some are using the new A1, A2 system.

Blue Mountain

The most famous coffee in the country is Blue Mountain Coffee. Blue Mountain Coffee is produced in the Blue Mountains near Kingston, the capital of Jamaica. Because its output is small and monopolized by Japan, the quantity flowing to other countries is very small, which also causes the price to remain high. In the early years, because of pipeline problems, there were very few authentic Blue Mountain coffee in China, only "Blue Mountain Coffee". To say that the biggest feature of Blue Mountain Coffee is the balance of various flavors, but people who like it like this balance, but people who don't like it regard this balance as boring, and think that the biggest feature of Blue Mountain is that it has no characteristics.

Grading: The grading of Blue Mountains, from high to low, is divided into Blue Mountain No.1, No.2, No.3 and Blue Mountain Mixed. And the more special blue mountain round beans (PB). In addition to Blue Mountain coffee, coffee grades from other regions of Jamaica are also divided from high to low: alpine coffee, Jamaica premium and Jamaica select.

Hawaii KONA

"Due to the island terrain and volcanic soil, Hawaiian coffee has a very special taste, not too strong, not too sour and has a mellow taste, with pleasant wine aroma and acid.

KONA coffee is divided into four grades, namely Extra Fancy, Fancy, Prime and Gr. No. 1, etc. However, due to low yield and high production cost, the price of Kona in the market is catching up with Jamaica Blue Mountain in recent years, and it is increasingly difficult to buy good Kona beans.

* Summer

Rose summer is a new variety in recent years, planted in many parts of the world, Panama, Guatemala, Colombia and other Latin American countries with high quality, now famous, prices catch up with Blue Mountain and KONA. Flavor is mainly fruity and a similar aroma of oolong tea, so some people say that when drinking rose summer, there is a feeling of drinking herbal tea.

Brazil

Brazil is the world's largest coffee producer, with the world's largest total output. Coffee tastes mild, slightly sour, slightly bitter, no major defects, no special outstanding advantages, relatively moderate, so there are not many fine coffee, mainly used as beans.

Colombia

Colombia coffee is the second largest coffee producer. Although the yield is not as good as Brazil, the overall quality of the coffee beans is higher. Colombia coffee should give the greatest feeling is smooth, this coffee is medium alcohol, low acidity, sweet taste, with some nutty flavor, suitable for medium or deep roast, drink alone, with beans are good.

Kenya AA

Clear fruity and acid aromas, sour and yega-shefi bright acid is not the same, Kenya acid is more rough.

Grading: AA is actually a classification of Kenyan coffee. Above it, there are AA++, AA+, AB and PB round beans. Kenyan coffee is now commonly referred to as Kenya AA.

Antigua, Guatemala

Antigua coffee is produced in Antigua Island, because it is planted on the hillside in the volcanic hinterland. The beans will contain nitrogen elements. After roasting, there will be a charcoal or smoky taste, but this flavor has a lot to do with the roasting depth. It is difficult to express it like medium roasting.

Costa Rica

The most famous is the Tarasu region. Due to the strict control of the local government, the quality of raw beans is good, and there are few defective beans. Planting at high altitudes has a strong sour taste, and because of the lower temperature in mountainous areas coffee trees grow slower, with a more complex and not monotonous taste.
