Do you understand cold extract, ice brew, ice drop and Japanese iced coffee?

What is cold coffee?

Cold extracted coffee, known as Cold Brew Coffee in English, is made of ground coffee beans soaked in cold water for at least 12 hours and filtered by professional utensils. If the alcohol thickness is higher, the time can also be extended to 24-48 hours. Generally speaking, the process of extracting coffee at low temperature belongs to cold extraction. Low temperature and long extraction time are the two main characteristics of cold extracted coffee.

Cold extracted VS ice droplets

Many people often confuse cold extract with ice droplets. It is also iced coffee. The taste and production process of these two kinds of coffee are very different. To put it simply, the cold extraction method belongs to the immersion type, while the ice droplet is the percolation type.

For specific style differences, please refer to the table above:

Production principle

Cold-extracted coffee is produced by slow extraction after mixing coffee powder and ice water in a certain proportion. The coffee produced by cold extraction process has a low sense of acidity, low temperature and long contact with coffee powder, so that only small molecular flavor substances, such as flower and fruit flavor, are extracted, while those with larger molecules, such as smoky flavor, are difficult to extract.

Make your own cold coffee

Method one

1. Grind the coffee beans into powder and pour them into a container.

2. Add 20 grams of coffee powder to the sharing pot, add about 350 milliliters of water, and stir well.

Tips: the ratio of coffee powder to water is 1:15-1:20, adjusted according to preference.

3. The plastic film is sealed and refrigerated for more than 12 hours. 24 hours is the best. The cold storage temperature should be controlled at 0-5 degrees as much as possible.

4. take it out after cold storage and filter with boiling filter paper or filter cloth.

Method two

1. Put 20g coffee bean powder into a non-woven filter bag (or gauze) and seal it.

2. Put the filter bag into the sealing cup and add water.

3. Press the filter bag for a few seconds, let the powder absorb water, cover the lid, and put it in the refrigerator.

4. Remove the filter bag and drink it.

If the store is used, you can also purchase special cold extraction appliances, such as HARIO, TODDY and so on.

Preservation of cold extract

Cold extracted coffee for more than a week is not recommended. Sterilized sealed cans can be used for convenient storage. You can also consider freezing the cold-extracted coffee into an ice case, and blending syrup and other excipients is another vitality.

Of course, coffee shops at home and abroad in order to promote this drink, with fashionable outer bottle packaging, have stolen the limelight in instagram and American TV series. While improving the appearance, it also makes the storage more convenient.
